There's nothing better than starting a new week with a hearty, one-skillet meal! Today's chuckwagon favorite combines tender chicken, baby potatoes, smoky bacon, sweet honey BBQ sauce, and melted cheddar cheeseĀ into a meal that's easy to prepare and big on flavor.
Whether you're cooking in the kitchen or around the campfire, this recipe is sure to become a family favorite!

šš„š„š§ Ingredients
2 pounds boneless chicken breasts or thighs, cubed
1½ pounds baby potatoes, halved
6 slices bacon, cooked and crumbled
1 small onion, diced
2 cloves garlic, minced
1 cup honey BBQ sauce
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon black pepper
2 cups shredded sharp cheddar cheese
Chopped parsley for garnish (optional)

1ļøā£ Heat olive oil in a large cast iron skillet over medium-high heat.
2ļøā£ Season the chicken with smoked paprika, garlic powder, and black pepper. Cook until lightly browned.
3ļøā£ Add the potatoes and onion. Cover and cook for 15ā20 minutes, stirring occasionally, until the potatoes begin to soften.
4ļøā£ Stir in the garlic and cook for one minute.
5ļøā£ Pour the honey BBQ sauce over the chicken and potatoes, stirring until everything is well coated.
6ļøā£ Sprinkle the bacon and cheddar cheese evenly over the top.
7ļøā£ Cover for 3ā5 minutes, until the cheese is melted and bubbly.
8ļøā£ Garnish with fresh parsley and serve hot.
