Good morning, folks! 🤠
If you've ever been to a championship BBQ competition, you know that burnt ends are often called "BBQ Candy!" These smoky, caramelized bites of brisket are tender on the inside, crispy on the outside, and coated in a sweet, smoky sauce that keeps folks coming back for more.
Today's recipe is inspired by the flavors that have won awards on the BBQ circuit. While every pitmaster has their own secret, this recipe will have your family and friends asking for seconds!

🥩🏆 Championship BBQ Rub
Ingredients
5 lbs whole brisket point
2 tablespoons coarse kosher salt
2 tablespoons coarse black pepper
2 tablespoons smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons chili powder
2 teaspoons ground mustard
2 teaspoons brown sugar
1 teaspoon cayenne pepper (optional)
🍯 Championship BBQ Glaze
1 cup favorite smoky BBQ sauce
¼ cup honey
¼ cup brown sugar
4 tablespoons butter
1 tablespoon Worcestershire sauce
2 tablespoons apple juice
🔥 Chuckwagon Cooking Instructions
Step 1
Preheat your smoker to 250°F using hickory, oak, or pecan wood.
Step 2
Trim excess fat from the brisket point, leaving about ¼ inch of fat.
Step 3
Coat generously with the Championship BBQ Rub.
Step 4
Smoke for 5–6 hours, spritzing occasionally with apple juice until the internal temperature reaches 165°F.
Step 5
Wrap the brisket in butcher paper or foil and continue smoking until the internal temperature reaches 200–203°F.
Step 6
Remove from the smoker and let rest for 30 minutes.
Step 7
Cut into 1-inch cubes.
Step 8
Place the cubes into an aluminum pan. Add the BBQ sauce, honey, butter, brown sugar, Worcestershire sauce, and apple juice. Toss until evenly coated.
Step 9
Return the pan to the smoker uncovered for 60–90 minutes, stirring every 20–30 minutes, until the sauce becomes sticky, glossy, and caramelized.
Serve immediately while hot!

⭐ Pitmaster's Championship Tip
The secret to award-winning burnt ends is patience. Don't rush the cook! Low and slow allows the fat to render beautifully, creating incredibly tender bites. During the final glazing stage, stir gently every 20–30 minutes so every piece develops that rich, sticky bark judges love.
🏆 Judge's Scoring Secrets
Competition judges typically look for:
✅ Rich mahogany color✅ Beautiful smoke ring✅ Tender, juicy texture✅ Balanced sweet, smoky, and savory flavor✅ Sticky caramelized glaze✅ Uniform bite-sized pieces
