• 1½ lbs ground beef

• 1 small onion, diced

• 2 cloves garlic, minced

• 1 packet taco seasoning

• 1 can Rotel tomatoes

• 3 cups beef broth

• 12 oz rotini pasta

• 1 cup sour cream

• 2 cups shredded Mexican blend cheese

• ½ teaspoon black pepper

• Optional: green onions and diced tomatoes for garnish

🔥 Chuckwagon Cooking Instructions

1️⃣ Heat a large cast iron skillet over medium heat.

2️⃣ Brown ground beef with onion until fully cooked.

3️⃣ Add garlic and taco seasoning.

4️⃣ Stir in Rotel tomatoes, beef broth, and uncooked pasta.

5️⃣ Bring to a boil, then reduce heat and simmer for 12–15 minutes, stirring occasionally.
