š² Creamy Turkey, Rice & Vegetable Camp Soup
A gentle, hearty soup ā tender turkey, soft rice, and vegetables in a creamy, soothing broth.
Serves:Ā 6ā8Cook Time:Ā 40ā45 minutes
This one feels like a hug in a bowl ā nourishing, steady, and perfect for cold February evenings.
š¦ Ingredients
2 tbsp butter
1 small onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
2 cups cooked shredded turkey (or chicken)
¾ cup uncooked long-grain rice
5 cups chicken or turkey broth
1 cup milk or half-and-half
1 tsp thyme
½ tsp black pepper
Salt to taste
Optional: handful of frozen peas
š³ Instructions
Build the BaseIn a Dutch oven, melt butter. Add onion and garlic; cook until fragrant.
Add Vegetables & RiceStir in carrots, celery, and rice. Cook 2ā3 minutes.
SimmerAdd broth, thyme, pepper, and salt. Bring to a gentle boil, then reduce heat and simmer 25ā30 minutes, until rice is tender.
Add Turkey & CreamStir in turkey and milk. Simmer gently 5ā7 minutes.
ServeAdd peas if using. Ladle into bowls and serve with biscuits or crusty bread.
