A gentle, hearty soup — tender turkey, soft rice, and vegetables in a creamy, soothing broth.

Serves:Ā 6–8Cook Time:Ā 40–45 minutes

This one feels like a hug in a bowl — nourishing, steady, and perfect for cold February evenings.

🦃 Ingredients

  • 2 tbsp butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cups cooked shredded turkey (or chicken)

  • ¾ cup uncooked long-grain rice

  • 5 cups chicken or turkey broth

  • 1 cup milk or half-and-half

  • 1 tsp thyme

  • ½ tsp black pepper

  • Salt to taste

  • Optional: handful of frozen peas

  1. Build the BaseIn a Dutch oven, melt butter. Add onion and garlic; cook until fragrant.

  2. Add Vegetables & RiceStir in carrots, celery, and rice. Cook 2–3 minutes.

  3. SimmerAdd broth, thyme, pepper, and salt. Bring to a gentle boil, then reduce heat and simmer 25–30 minutes, until rice is tender.

  4. Add Turkey & CreamStir in turkey and milk. Simmer gently 5–7 minutes.
