🍲 Cowboy Chicken, Corn & Potato Camp Stew
A hearty chuckwagon stew — tender chicken, sweet corn, and soft potatoes simmered in a savory broth.
Serves: 6–8Cook Time: 40–45 minutes
This stew is cozy but a little lighter than winter soups — perfect for that in-between season when spring is just around the corner.
🍗 Ingredients
2 cups cooked shredded chicken
2 tbsp butter or olive oil
1 small onion, diced
2 cloves garlic, minced
3 medium potatoes, diced
1½ cups corn (fresh, frozen, or canned)
2 carrots, sliced
4½ cups chicken broth
1 tsp thyme
½ tsp black pepper
Salt to taste
Optional: handful of chopped parsley
🍳 Instructions
Build the Flavor BaseIn a Dutch oven, melt butter over medium heat.Add onion and garlic and cook until soft and fragrant.
Add VegetablesStir in potatoes and carrots. Cook 3–4 minutes.
Create the StewAdd chicken broth, thyme, pepper, and salt.Bring to a gentle boil.
SimmerReduce heat and simmer 20–25 minutes, until potatoes are tender.
Finish the StewAdd shredded chicken and corn. Simmer another 5–7 minutes.
ServeGarnish with parsley if desired and serve with biscuits or cornbread.
