A hearty chuckwagon favorite — smoky sausage, tender potatoes, and pinto beans simmered in a rich, savory broth.

Serves:Ā 6–8Cook Time:Ā 40–45 minutes

This stew is simple, filling, and full of rustic flavor — the kind of meal that keeps everyone satisfied after a long day.

🫘 Ingredients

  • 1 lb smoked sausage, sliced

  • 2 tbsp butter or bacon grease

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 medium potatoes, diced

  • 1 can (15 oz) pinto beans, drained & rinsed

  • 2 carrots, sliced

  • 4½ cups chicken or beef broth

  • 1 tsp smoked paprika

  • ½ tsp black pepper

  • Salt to taste

  • Optional: pinch of thyme

  1. Brown the SausageIn a Dutch oven over medium heat, cook the sausage slices until lightly browned. Remove and set aside.

  2. Build the Flavor BaseAdd butter if needed, then cook onion and garlic until soft and fragrant.

  3. Add VegetablesStir in potatoes and carrots. Cook 3–4 minutes.

  4. Create the StewAdd broth, pinto beans, paprika, thyme (if using), pepper, and salt.
