š² Cowboy Sausage, Potato & Pinto Bean Camp Stew
A hearty chuckwagon favorite ā smoky sausage, tender potatoes, and pinto beans simmered in a rich, savory broth.
Serves:Ā 6ā8Cook Time:Ā 40ā45 minutes
This stew is simple, filling, and full of rustic flavor ā the kind of meal that keeps everyone satisfied after a long day.
š« Ingredients
1 lb smoked sausage, sliced
2 tbsp butter or bacon grease
1 small onion, diced
2 cloves garlic, minced
3 medium potatoes, diced
1 can (15 oz) pinto beans, drained & rinsed
2 carrots, sliced
4½ cups chicken or beef broth
1 tsp smoked paprika
½ tsp black pepper
Salt to taste
Optional: pinch of thyme
š³ Instructions
Brown the SausageIn a Dutch oven over medium heat, cook the sausage slices until lightly browned. Remove and set aside.
Build the Flavor BaseAdd butter if needed, then cook onion and garlic until soft and fragrant.
Add VegetablesStir in potatoes and carrots. Cook 3ā4 minutes.
Create the StewAdd broth, pinto beans, paprika, thyme (if using), pepper, and salt.
SimmerBring to a gentle boil, then reduce heat. Cover and simmer 25ā30 minutesĀ until vegetables are tender.
Finish the StewReturn sausage to the pot and simmer 5 more minutes.
ServeLadle into bowls and serve with cornbread or warm biscuits.
