🏆🔥 Blue-Ribbon Smoky Bacon BBQ Meatballs with Loaded Ranch Potato Wedges 🔥🏆

Good morning, folks! 🤠 Happy Friday!

We're ending the week with a recipe made for backyard cookouts, family suppers, and cook-off tables! Today's Blue-Ribbon Meatballs are tender on the inside, caramelized on the outside, and coated in a homemade sweet-and-smoky BBQ glaze with crispy bacon.

Then we're piling up some golden ranch potato wedges with cheddar, bacon, and green onions. This is the kind of meal where you might want to make extra—because somebody is definitely coming back for seconds! 😋

🥓🍖 For the Cowboy Meatballs

  • 2 lbs ground beef

  • ½ lb ground pork

  • 6 slices bacon, cooked crisp and finely crumbled

  • 2 large eggs

  • ¾ cup breadcrumbs

  • ½ cup finely diced sweet onion

  • 3 cloves garlic, minced

  • ¼ cup milk

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon yellow mustard

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon black pepper

  • 1 teaspoon salt

🔥 Sweet & Smoky BBQ Glaze

  • 1 cup your favorite BBQ sauce

  • ¼ cup brown sugar

  • 2 tablespoons honey

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon Dijon mustard

  • ½ teaspoon smoked paprika

  • Pinch of cayenne, optional

🥔 Loaded Ranch Potato Wedges

  • 3 lbs russet potatoes

  • 3 tablespoons olive oil

  • 1 packet ranch seasoning

  • ½ teaspoon smoked paprika

  • 1½ cups shredded sharp cheddar

  • 6 slices bacon, cooked and crumbled

  • 3 green onions, sliced

  • Sour cream for serving

🔥 Let's Get Cooking!

1️⃣ Get those potatoes going.Preheat the oven to 425°F. Cut the potatoes into thick wedges and toss with olive oil, ranch seasoning, and smoked paprika.

Spread them in a single layer and roast for 35–40 minutes, turning halfway through.

2️⃣ Make the meatballs.Reduce oven temperature to 400°F when you're ready to bake the meatballs.

Combine the beef, pork, bacon, eggs, breadcrumbs, onion, garlic, milk, Worcestershire sauce, mustard, and seasonings.

Mix gently—don't overwork that meat!

3️⃣ Roll into meatballs about 1½ inches across and arrange on a parchment-lined baking sheet.

Bake for approximately 18–22 minutes, or until they reach 160°F internally.

4️⃣ Make that glorious glaze! 🤠Combine all the glaze ingredients in a saucepan and simmer gently for 5–7 minutes until slightly thickened.

5️⃣ Toss the cooked meatballs in the warm BBQ glaze.

For an extra-sticky finish, return them to the oven for about 5 minutes so the glaze caramelizes.

6️⃣ Load those potatoes!When the wedges are crispy, sprinkle them with cheddar and bacon.

Bake another 3–5 minutes until the cheese is bubbly, then finish with green onions.

🏆 Cook-Off Secret

Here's where we take these from good to competition-worthy.

If you're using a smoker or charcoal grill, give the cooked meatballs about 10 minutes over indirect smoke before glazing them.

Then brush them with BBQ sauce and move them over the hotter side just long enough to caramelize the outside.

Smoke + bacon + sticky BBQ glaze = serious cook-off flavor! 🔥

🍽️ Serve It Up With

I'd put these on a big platter with the loaded potato wedges and add grilled corn, creamy coleslaw, dill pickles, sliced garden tomatoes, warm cornbread with honey butter, and a pitcher of cold sweet tea.

After glazing the meatballs, put them in a slow cooker on LOW or WARM with a little extra BBQ sauce. They'll stay hot and saucy while everyone helps themselves.
