Good morning, ! 🤠Today’s chuckwagon favorite is a creamy, cheesy, and wholesome one-pan meal that’s perfect for busy days but still feels like a homemade blessing.

This dish brings together tender chicken, hearty rice, and fresh broccoli—a balanced, filling meal all in one skillet!


🍗🥦 Ingredients

  • 1½ lbs chicken (cubed or shredded)

  • 1 tablespoon oil or butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup uncooked rice

  • 2 cups chicken broth

  • 1½ cups broccoli florets (fresh or frozen)

  • 1 cup milk or heavy cream

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

  • 1½ cups shredded cheddar cheese

🔥 Chuckwagon Cooking Instructions

1️⃣ Heat a large cast iron skillet over medium heat.

2️⃣ Add oil and cook chicken until browned and cooked through. Remove and set aside.

3️⃣ In the same skillet, sauté onion and garlic until soft and fragrant.

4️⃣ Add uncooked rice and stir for 1–2 minutes to lightly toast.

5️⃣ Pour in chicken broth and bring to a gentle boil.

6️⃣ Add broccoli, reduce heat, cover, and simmer for 15–18 minutes until rice is tender.

7️⃣ Stir in cooked chicken, milk, and seasonings.

8️⃣ Add cheese and stir until melted and creamy.
