Today's recipe is a little different from your traditional red chili—but oh, is it delicious! Chili Verde is a Southwestern favorite made with tender pork, fire-roasted tomatillos, green chiles, onions, garlic, and a blend of spices that simmer low and slow until every bite is melt-in-your-mouth tender.

This recipe has all the bold flavors you'd expect from an award-winning chuckwagon meal and is perfect served with warm tortillas or over a bowl of fluffy rice.

Let's saddle up and get cooking!

🌶️🐖 Ingredients

  • 3 lbs pork shoulder, cut into 1-inch cubes

  • 2 tablespoons olive oil

  • 1 large onion, diced

  • 5 cloves garlic, minced

  • 1½ lbs fresh tomatillos, husked and halved

  • 2 poblano peppers

  • 2 jalapeños (seeded for less heat)

  • 2 cans (4 oz each) diced green chiles

  • 4 cups chicken broth

  • 1 teaspoon ground cumin

  • 1 teaspoon oregano

  • 1 teaspoon smoked paprika

  • ½ teaspoon black pepper

  • 1 teaspoon salt

  • 1 tablespoon fresh lime juice

  • ¼ cup chopped fresh cilantro

🔥 Chuckwagon Cooking Instructions

Step 1 – Roast the Vegetables

Place the tomatillos, poblano peppers, and jalapeños on a baking sheet.

Broil for 8–10 minutes, turning once, until lightly charred.

Transfer them to a blender and puree until smooth.

Step 2 – Brown the Pork

Heat the olive oil in a Dutch oven or large cast iron pot.

Brown the pork cubes in batches until nicely caramelized.

Remove and set aside.

Step 3 – Build the Chili

In the same pot, sauté the onions for about 5 minutes.

Add the garlic and cook for another minute.

Return the pork to the pot.

Pour in the roasted tomatillo mixture, diced green chiles, chicken broth, cumin, oregano, smoked paprika, salt, and pepper.

Bring to a gentle boil.

Reduce the heat, cover, and simmer for 2½–3 hours, stirring occasionally, until the pork is fork-tender.

Step 4 – Finish

Stir in the lime juice and fresh cilantro just before serving.

Taste and adjust the seasoning if needed.
