šŸ² Campfire Cowboy Chili Stew

A thick, smoky chili-style stew packed with beef, beans, and rich western flavor.

Serves:Ā 6–8Cook Time:Ā 45–50 minutes

🌶 Ingredients

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can kidney beans, drained

  • 1 can pinto beans, drained

  • 1 can diced tomatoes

  • 3½ cups beef broth

  • 1 tbsp chili powder

  • 1 tsp cumin

  • ½ tsp smoked paprika

  • Salt & pepper to taste

  1. Brown ground beef in a Dutch oven.

  2. Add onion and garlic; cook until soft.

  3. Stir in beans, tomatoes, and broth.

  4. Add seasonings and bring to a gentle boil.

  5. Reduce heat and simmer 30–35 minutesĀ until thick and rich.

Serves:Ā 6–8Cook Time:Ā 40 minutes

  • 4 slices bacon, chopped

  • 2 tbsp butter

  • 1 onion, diced

  • 3 potatoes, diced

  • 2 cups cooked shredded chicken

  • 4 cups chicken broth

  • 1 cup half-and-half

  • ½ tsp black pepper

  • Salt to taste

šŸ³ Instructions

  1. Cook bacon in a Dutch oven; remove and set aside.

  2. Add onion and potatoes to bacon drippings.

  3. Pour in broth and simmer 20 minutes.

  4. Add chicken and cream.

  5. Simmer 5–7 minutes.

  • ¾ cup pearl barley

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 1 onion, diced

  • 1 can diced tomatoes

  • 5 cups beef broth

  • 1 tsp thyme

  • ½ tsp black pepper

  • Salt to taste

  1. Brown beef in a Dutch oven.

  2. Add onion, carrots, and celery; cook 3–4 minutes.

  3. Stir in barley, tomatoes, broth, and seasonings.

  4. Simmer 45–50 minutesĀ until barley is tender.
