š² Rustic Chicken, White Bean & Herb Camp Soup
A simple, nourishing soup ā tender chicken, creamy white beans, and gentle herbs in a rich broth.
Serves:Ā 6ā8Cook Time:Ā 40ā45 minutes
This soup is comforting without being heavy ā steady warmth in every spoonful.
š Ingredients
2 tbsp butter or olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
2 cups cooked shredded chicken
1 can (15 oz) great northern or cannellini beans, drained & rinsed
4ā5 cups chicken broth
1 tsp thyme
½ tsp black pepper
Salt to taste
Optional: handful of fresh spinach or parsley
š³ Instructions
Build the BaseIn a Dutch oven, heat butter or oil. Add onion and garlic; cook until fragrant.
Add VegetablesStir in carrots and celery. Cook 3ā4 minutes.
Add Broth & BeansAdd chicken, beans, broth, thyme, pepper, and salt.
SimmerBring to a gentle boil, then reduce heat. Cover and simmer 30ā35 minutes, until vegetables are tender.
Finish & ServeAdd spinach or parsley if using. Simmer 2ā3 more minutes.Serve hot with crusty bread or biscuits.

White beans were treasured for stretching meat and thickening broth naturally ā mash a few against the pot for a heartier texture.
