šŸ² Rustic Chicken, White Bean & Herb Camp Soup

A simple, nourishing soup — tender chicken, creamy white beans, and gentle herbs in a rich broth.

Serves:Ā 6–8Cook Time:Ā 40–45 minutes

This soup is comforting without being heavy — steady warmth in every spoonful.

šŸ” Ingredients

  • 2 tbsp butter or olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cups cooked shredded chicken

  • 1 can (15 oz) great northern or cannellini beans, drained & rinsed

  • 4–5 cups chicken broth

  • 1 tsp thyme

  • ½ tsp black pepper

  • Salt to taste

  • Optional: handful of fresh spinach or parsley

  1. Build the BaseIn a Dutch oven, heat butter or oil. Add onion and garlic; cook until fragrant.

  2. Add VegetablesStir in carrots and celery. Cook 3–4 minutes.

  3. Add Broth & BeansAdd chicken, beans, broth, thyme, pepper, and salt.

  4. SimmerBring to a gentle boil, then reduce heat. Cover and simmer 30–35 minutes, until vegetables are tender.

  5. Finish & ServeAdd spinach or parsley if using. Simmer 2–3 more minutes.Serve hot with crusty bread or biscuits.
