🥔 Smoky Sausage, Potato & Corn Camp Soup

A rich, hearty soup — smoky sausage, tender potatoes, and sweet corn in a comforting broth.

Serves: 6–8Cook Time: 40–45 minutes

This one is cozy and satisfying — simple ingredients that come together beautifully in one pot.

🥓 Ingredients

  • 1 lb smoked sausage, sliced

  • 2 tbsp butter or bacon grease

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 medium potatoes, diced

  • 1½ cups corn (fresh, frozen, or canned)

  • 4 cups chicken broth

  • 1 cup milk or half-and-half

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • Salt to taste

  • Optional: pinch of thyme

🍳 Instructions

  1. Brown the SausageIn a Dutch oven, brown sausage slices. Remove and set aside.

  2. Build the BaseIn the same pot, melt butter if needed. Add onion and garlic; cook until fragrant.

  3. Add Potatoes & BrothStir in potatoes and broth. Bring to a gentle boil, then reduce heat and simmer 20–25 minutes, until potatoes are tender.

  4. Finish the SoupAdd sausage back to the pot along with corn, milk, paprika, pepper, and salt.

  5. Warm & ServeSimmer gently 5–8 minutes (do not boil after adding milk).Serve hot with cornbread or biscuits.
