Good morning, ! 🤠Today’s chuckwagon meal is a sweet, smoky, and satisfying one-pan dish that comes together easy but tastes like it’s been slow-cooked all day.
This recipe brings together tender chicken, bold BBQ flavor, and hearty rice—perfect for a busy day with a whole lot of comfort built in!
🍗🍚 Ingredients
1½ lbs chicken (cubed or shredded)
1 tablespoon oil or butter
1 small onion, diced
2 cloves garlic, minced
1 cup uncooked rice
2 cups chicken broth
¾ cup BBQ sauce
½ teaspoon black pepper
½ teaspoon smoked paprika
½ teaspoon garlic powder
Optional: 1 cup shredded cheese
🔥 Chuckwagon Cooking Instructions
1️⃣ Heat a large cast iron skillet over medium heat.
2️⃣ Add oil and cook chicken until browned and cooked through. Remove and set aside.
3️⃣ In the same skillet, sauté onion and garlic until soft and fragrant.
4️⃣ Add uncooked rice and stir for 1–2 minutes to lightly toast.
5️⃣ Pour in chicken broth and BBQ sauce, stirring well.
6️⃣ Return chicken to the skillet and mix everything together.
7️⃣ Bring to a gentle boil, then reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
8️⃣ Optional: sprinkle cheese on top, cover, and let melt before serving.
