Good morning, ! š¤ Todayās chuckwagon meal is a sweet, smoky, and satisfying one-pan dishĀ that comes together easy but tastes like itās been slow-cooked all day.
This recipe brings together tender chicken, bold BBQ flavor, and hearty riceāperfect for a busy day with a whole lot of comfort built in!
šš Ingredients
1½ lbs chicken (cubed or shredded)
1 tablespoon oil or butter
1 small onion, diced
2 cloves garlic, minced
1 cup uncooked rice
2 cups chicken broth
¾ cup BBQ sauce
½ teaspoon black pepper
½ teaspoon smoked paprika
½ teaspoon garlic powder
Optional: 1 cup shredded cheese
š„ Chuckwagon Cooking Instructions
1ļøā£ Heat a large cast iron skilletĀ over medium heat.
2ļøā£ Add oil and cook chicken until browned and cooked through. Remove and set aside.
3ļøā£ In the same skillet, sautĆ© onion and garlic until soft and fragrant.
4ļøā£ Add uncooked rice and stir for 1ā2 minutes to lightly toast.
5ļøā£ Pour in chicken broth and BBQ sauce, stirring well.
6ļøā£ Return chicken to the skillet and mix everything together.
7ļøā£ Bring to a gentle boil, then reduce heat, cover, and simmer for 18ā20 minutesĀ until rice is tender.
8ļøā£ Optional: sprinkle cheese on top, cover, and let melt before serving.
