🍲 Hearty Beef & Lentil Camp Stew

A rich, earthy winter stew — tender beef and hearty lentils simmered slow for deep, steady comfort.

Serves: 6–8Cook Time: 45–55 minutes

This is the kind of pot that quietly bubbles while the house warms up — filling, affordable, and built to nourish.

🥩 Ingredients

  • 1 lb beef stew meat, cubed

  • 2 tbsp butter or bacon grease

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 1 cup dried lentils, rinsed

  • 4–5 cups beef broth

  • 1 tsp thyme

  • ½ tsp black pepper

  • Salt to taste

  • Optional: bay leaf

🍳 Instructions

  1. Brown the BeefHeat butter or bacon grease in a large Dutch oven over medium heat.Add beef and brown lightly on all sides (about 5–6 minutes).Remove excess grease if needed.

  2. Build the Flavor BaseAdd diced onion and garlic to the pot. Cook 2–3 minutes until soft and fragrant.

  3. Add Vegetables & LentilsStir in carrots, celery, and rinsed lentils. Mix well to combine.

  4. Create the StewPour in beef broth. Add thyme, black pepper, salt, and bay leaf if using.

  5. Simmer SlowBring to a gentle boil, then reduce heat to low.Cover and simmer 35–40 minutes, stirring occasionally, until lentils are tender and stew thickens.

  6. Final TouchRemove bay leaf. Taste and adjust salt if needed.

  7. ServeLadle into bowls and serve with cornbread, biscuits, or crusty bread.

🤠 Chuckwagon Tip

Lentils naturally thicken the broth as they cook — mash a small scoop against the side of the pot if you want it even heartier.
