This soup is simple, nourishing, and perfect for a cool March day — light enough for spring but still warm and filling.

  • 2 cups cooked shredded chicken

  • 2 tbsp butter or olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • ¾ cup uncooked long-grain rice

  • 5 cups chicken broth

  • 1 cup green beans (fresh or frozen)

  • 1 tsp thyme

  • ½ tsp black pepper

  • Salt to taste

  • Optional: handful of fresh parsley
