š² Old-Fashioned Cowboy Cabbage & Beef Camp Stew
A hearty chuckwagon classic ā tender beef, sweet cabbage, potatoes, and savory broth simmered into a rich, comforting stew.

This stew is simple, filling, and full of rustic flavor ā the kind of pot that feeds a hungry crew after a long day.

1 lb ground beef or beef stew meat
2 tbsp butter or bacon grease
1 small onion, diced
2 cloves garlic, minced
3 cups chopped cabbage
2 medium potatoes, diced
2 carrots, sliced
4½ cups beef broth
1 can (14.5 oz) diced tomatoes
1 tsp thyme
½ tsp black pepper
Salt to taste
š³ Instructions
Brown the BeefIn a Dutch oven, heat butter or bacon grease over medium heat. Brown the beef until fully cooked.
Build the Flavor BaseAdd onion and garlic and cook until fragrant.
Add VegetablesStir in cabbage, potatoes, and carrots. Cook for 3ā4 minutes.
Create the StewPour in beef broth and diced tomatoes. Add thyme, pepper, and salt.
SimmerBring to a gentle boil, then reduce heat. Cover and simmer 35ā40 minutesĀ until vegetables are tender.
