šŸ² Smoky Beef, Bean & Sweet Potato Camp Stew

A rich, hearty winter stew — tender beef, smoky beans, and sweet potatoes simmered low and slow.

Serves:Ā 6–8Cook Time:Ā 50–60 minutes

This stew brings a little natural sweetness from the sweet potatoes balanced with smoky flavor — deeply comforting and filling.

🄩 Ingredients

  • 1 lb beef stew meat, cubed

  • 2 tbsp bacon grease or butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 medium sweet potatoes, diced

  • 1 can (15 oz) pinto or black beans, drained & rinsed

  • 1 can (14.5 oz) diced tomatoes

  • 4–5 cups beef broth

  • 1 tsp smoked paprika

  • 1 tsp thyme

  • ½ tsp black pepper

  • Salt to taste

  • Optional: pinch of chili flakes

  1. Brown the BeefHeat bacon grease in a Dutch oven. Brown beef lightly on all sides.

  2. Build the BaseAdd onion and garlic; cook until fragrant.

  3. Add Vegetables & BeansStir in sweet potatoes, beans, and diced tomatoes.

  4. Create the StewAdd broth, paprika, thyme, pepper, and salt.

  5. SimmerBring to a gentle boil, then reduce heat. Cover and simmer 40–45 minutes, until sweet potatoes are tender and stew thickens.
