š² Smoky Beef, Bean & Sweet Potato Camp Stew
A rich, hearty winter stew ā tender beef, smoky beans, and sweet potatoes simmered low and slow.
Serves:Ā 6ā8Cook Time:Ā 50ā60 minutes
This stew brings a little natural sweetness from the sweet potatoes balanced with smoky flavor ā deeply comforting and filling.

1 lb beef stew meat, cubed
2 tbsp bacon grease or butter
1 small onion, diced
2 cloves garlic, minced
2 medium sweet potatoes, diced
1 can (15 oz) pinto or black beans, drained & rinsed
1 can (14.5 oz) diced tomatoes
4ā5 cups beef broth
1 tsp smoked paprika
1 tsp thyme
½ tsp black pepper
Salt to taste
Optional: pinch of chili flakes
š³ Instructions
Brown the BeefHeat bacon grease in a Dutch oven. Brown beef lightly on all sides.
Build the BaseAdd onion and garlic; cook until fragrant.
Add Vegetables & BeansStir in sweet potatoes, beans, and diced tomatoes.
Create the StewAdd broth, paprika, thyme, pepper, and salt.
SimmerBring to a gentle boil, then reduce heat. Cover and simmer 40ā45 minutes, until sweet potatoes are tender and stew thickens.
ServeLadle into bowls and serve with cornbread or biscuits.
