š„© Slow-Simmered Chuckwagon Pot Roast & Root Vegetable Stew
A rich, weekend-worthy stew ā tender beef, carrots, potatoes, and deep savory broth.
Serves:Ā 6ā8Cook Time:Ā 2 hours
š„ Ingredients
3 lb chuck roast, cut into chunks
2 tbsp bacon grease or olive oil
1 large onion, chopped
3 carrots, thick sliced
3 potatoes, chunked
2 parsnips (optional, very rustic)
5 cups beef broth
1 tsp thyme
½ tsp black pepper
Salt to taste
š³ Instructions
Brown beef in Dutch oven on all sides.
Add onion and cook until soft.
Add vegetables, broth, and seasonings.
Cover and simmer low 1½ā2 hours, until beef is fork-tender.
Serve with crusty bread.
š¤ Tip:Ā The longer this simmers, the richer the broth becomes.

š² Creamy Chicken, Bacon & Corn Camp Chowder
Cozy, creamy, and just indulgent enough for a Saturday night.
Serves:Ā 6ā8Cook Time:Ā 40 minutes
š„ Ingredients
4 slices bacon, chopped
2 tbsp butter
1 small onion, diced
3 potatoes, diced
2 cups cooked shredded chicken
1½ cups corn
4 cups chicken broth
1 cup half-and-half
½ tsp black pepper
Salt to taste
š³ Instructions
Cook bacon; remove half for topping.
Add onion and potatoes to bacon drippings.
Pour in broth and simmer 20 minutes.
Add chicken, corn, and cream.
Simmer 5ā7 minutes (do not boil).
Top with reserved bacon.
š¤ Tip:Ā Mash a few potatoes in the pot for natural thickness.

š· Hearty Spring-Forward Beef & Barley Garden Stew
A gentle transition toward March ā hearty but bright with vegetables.
Serves:Ā 6ā8Cook Time:Ā 50ā60 minutes

1 lb beef stew meat
¾ cup pearl barley
2 carrots, sliced
2 celery stalks
1 cup green beans
1 can diced tomatoes
5 cups beef broth
1 tsp thyme
½ tsp black pepper
Salt to taste
š³ Instructions
Brown beef in Dutch oven.
Add vegetables and barley.
Stir in broth, tomatoes, and seasonings.
Simmer 45ā50 minutes, until barley is tender.
Serve warm with biscuits.
š¤ Tip:Ā Barley gives that old-time chuckwagon heartiness while green beans hint that spring is coming.
