Happy Friday! We've done some creamy fall dishes this week, so today we're going back to good old-fashioned chuckwagon comfort food with a smoky BBQ twist.
Today's Maple Bourbon-Style BBQ Meatloaf is tender and juicy, topped with a sticky homemade maple BBQ glaze, and served alongside loaded cheddar smashed potatoes with bacon, cheese, sour cream, and green onions.
And don't let the name fool youâour bourbon-style sauce has NO alcohol in it. We're getting that deep, smoky-sweet flavor with molasses, maple, Worcestershire, and smoked paprika. â€ïžđ„
đ„© Chuckwagon BBQ Meatloaf
2 lbs ground beef
œ lb ground pork or mild sausage
2 large eggs
1 cup seasoned breadcrumbs
œ cup milk
1 small sweet onion, finely diced
3 cloves garlic, minced
2 tablespoons Worcestershire sauce
2 tablespoons BBQ sauce
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 teaspoon garlic powder
œ teaspoon onion powder
œ teaspoon black pepper
1 teaspoon salt
đ Maple Bourbon-Style BBQ Glaze
Ÿ cup smoky BBQ sauce
Œ cup pure maple syrup
2 tablespoons brown sugar
1 tablespoon molasses
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
œ teaspoon smoked paprika
Œ teaspoon garlic powder
đ„ Let's Get Cooking!
1ïžâŁ Preheat the oven. Heat your oven to 375°F.
2ïžâŁ Mix that meatloaf. Combine the beef, pork, eggs, breadcrumbs, milk, onion, garlic, Worcestershire, BBQ sauce, Dijon, and seasonings.
Use your hands to gently combine everything.
Don't overmix it!
3ïžâŁ Shape it up. Form the mixture into a loaf on a foil-lined rimmed baking sheet or place it in a loaf pan.
4ïžâŁ Make that glaze. Whisk together all the glaze ingredients.
Brush about one-third of the glaze over the meatloaf.
5ïžâŁ Bake it. Bake for about 35 minutes, then brush with another generous layer of glaze.
Return it to the oven and continue cooking until the center reaches 160°F, generally another 20â30 minutes depending on the shape and thickness.
6ïžâŁ Glaze it one more time! đ„ During the final few minutes, brush the top with the remaining sauce.
If you like those sticky caramelized edges, place it briefly under the broilerâbut watch that sugary glaze closely!
7ïžâŁ Let it rest. Give your meatloaf 10 minutes before slicing.

đ„ Loaded Cheddar Smashed Potatoes
You'll Need
2œ lbs baby Yukon Gold potatoes
4 tablespoons melted butter
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and black pepper
1œ cups shredded sharp cheddar
6 slices bacon, cooked and crumbled
œ cup sour cream
Œ cup chopped green onions
Make Them Crispy!
Boil the potatoes in salted water until fork-tender, about 15â20 minutes.
Drain well and place them on a greased baking sheet.
Use the bottom of a glass or measuring cup to gently SMASH each potato. đ€
Brush with melted butter and olive oil and season with garlic powder, salt, and pepper.
Bake at 425°F for about 20â25 minutes, until the edges are golden and crispy.
Sprinkle with cheddar and bacon and return to the oven until the cheese melts.
Finish with sour cream and green onions.

Mix the ingredients just until combined and shape the loaf gently.
And here's another secret: let your breadcrumbs soak in the milk for about 5 minutes before adding them to the meat. That little trick helps keep the meatloaf moist and tender.
