š„©š Smothered Cowboy Steak Bites with Creamy Mushroom Gravy & Crispy Ranch PotatoesĀ š„š„

Happy Wednesday! Today we're putting together a hearty country-style skillet supperĀ that's packed with flavor.
We're taking tender, garlic-butter steak bites, smothering them in a rich mushroom-and-onion gravy, and serving them alongside crispy ranch-seasoned potatoes.
It's simple enough for a weeknight but tastes like something you'd order at your favorite country restaurant! ā¤ļø
š„© Garlic-Butter Cowboy Steak Bites
Ingredients
2 lbs sirloin steak, cut into 1½-inch cubes
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried thyme
1 teaspoon Worcestershire sauce
Salt and black pepper to taste
Fresh parsley for garnish
š Creamy Mushroom & Onion Gravy
2 tablespoons butter
1 large sweet onion, sliced
12 oz baby bella mushrooms, sliced
2 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups beef broth
½ cup heavy cream
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
½ teaspoon dried thyme
Salt and pepper to taste
š„ Crispy Ranch Potatoes
2 lbs baby potatoes, quartered
2 tablespoons olive oil
1 tablespoon dry ranch seasoning
½ teaspoon smoked paprika
½ teaspoon garlic powder
½ cup shredded cheddar, optional
4 slices crispy bacon, crumbled
Chopped green onions
š„ Let's Get Cooking!
1ļøā£ Get those potatoes going.Preheat the oven to 425°F.
Toss the potatoes with olive oil, ranch seasoning, smoked paprika, and garlic powder.
Spread them in a single layer on a baking sheet and roast for approximately 30ā40 minutes, turning halfway through, until golden and fork-tender.
During the last few minutes, sprinkle with cheddar if desired. Finish with bacon and green onions. š„š§
2ļøā£ Season the steak.Pat the steak pieces dryāthis helps them develop that beautiful brown crust.
Season with smoked paprika, onion powder, garlic powder, thyme, salt, and pepper.
3ļøā£ Get that skillet HOT! š„Heat the olive oil in a large cast-iron skillet over medium-high heat.
Add the steak in batches so you don't overcrowd the pan.
Sear for approximately 2ā3 minutes per side, depending on the size of the pieces and your preferred doneness.
Transfer the steak to a plate.
4ļøā£ Bring on the garlic butter! š§Reduce the heat slightly and add the butter and garlic.
Cook for about 30 seconds, then toss the steak briefly in the garlic butter with Worcestershire sauce.
Remove the steak again while you make the gravy.
š Make That Country Mushroom Gravy!
5ļøā£Ā Add 2 tablespoons butter to the same skillet.
Add the onions and mushrooms and cook for about 7ā10 minutes, until golden and softened.
Stir in the garlic.
6ļøā£Ā Sprinkle the flour over the mushrooms and stir for about 1 minute.
Slowly add the beef broth while scraping all those wonderful browned steak bits from the bottom of the skillet.
7ļøā£Ā Stir in Worcestershire, Dijon, thyme, salt, and pepper.
Simmer until the gravy thickens.
8ļøā£ Make it creamy.Reduce the heat to low and stir in the heavy cream.
Return the steak bites and their juices to the skillet just long enough to warm through.

š„© Dry steak + hot skillet + plenty of room = a beautiful sear!
If the steak pieces are wet or crowded together, they'll steam instead of brown.
Cook them in batches if necessary.
And don't throw away those browned bits left behind in the skillet. When you pour in the beef broth and scrape them loose, they become part of that wonderful gravy.
