šš„© Old-Fashioned Cowboy Beef Tips with Apple Cider Gravy & Buttery Herb Rice
Good morning, folks! š¤ š
Happy Monday, friends!
We're starting another beautiful October week with a country supper that's full of flavor, easy on the budget, and sure to bring everyone to the table!
Today we're making something a little different: tender, slow-simmered beef tips in a rich apple cider and onion gravy, served over buttery herb rice.
We're adding a side of roasted maple carrots and finishing supper with a warm cinnamon dessert!
This is the kind of meal that reminds me of Sunday dinners at Grandma's house, when the food was simple, the portions were generous, and nobody left hungry.
Grab that Dutch oven, friends. Let's get cooking!Ā ā¤ļøš„

ā MawMaw's Chuckwagon Secret
š„© Want tender beef tips instead of tough, chewy meat?
The secret is choosing the right cut of beef and giving it enough time to cook.
Chuck roast is wonderful for this recipe because it becomes tender as it slowly simmers.
Don't rush it!
And here's another little secret:
Apple cider adds a wonderful depth of flavor to beef gravy without making it taste like dessert.
The natural sweetness balances the savory broth, onions, and Worcestershire sauce.
Just be sure to use unsweetened apple cider rather than apple cider vinegar. They are very different ingredients!
š½ļø Make It a Monday Country Supper!
Serve with Southern green beans, maple-butter roasted carrots, buttery herb rice, warm yeast rolls, or a fresh apple-pecan salad.
And don't forget a glass of sweet tea! ā¤ļø
š And for dessert?
š Old-Fashioned Cinnamon Apple Dumplings
Imagine tender apples wrapped in flaky golden pastry, baked in a warm cinnamon-brown-sugar sauce.
Serve with vanilla ice cream and a drizzle of caramel.
Now that's a sweet way to finish a Monday!Ā āš
š Monday Chuckwagon Encouragement
Don't Let the Weight of the Week Steal Your Peace
As we begin another week, I want to share something that's been on my heart.
Sometimes Monday arrives, and before we've even finished our morning coffee, we're already thinking about everything that needs to be done.
Work responsibilities.
Family needs.
Bills that need paying.
Appointments to keep.
Problems that need solving.
And sometimes we're carrying worries that nobody else even knows about.
But friends, God never intended for us to carry every burden alone.
We spend so much time trying to figure everything out ourselves.
We make plans, worry about what might happen, and try to control things that are completely beyond our control.
And all the while, the Lord is reminding us to trust Him.
That doesn't mean we stop working or doing our part.
It means we stop allowing worry to rob us of the peace God wants us to have.
Sometimes the most important thing we can do is simply say:
"Lord, I've done all I know to do. Now I'm placing this in Your hands."
Whatever this week holds, remember that you don't have to face it without Him.
Pray before you worry.
Trust before you fear.
And remember that the same God who brought you through yesterday will be faithful tomorrow.
You may not know what this week will bring, but you know the One who holds every day.Ā ā¤ļø
š Scripture for Today
