Good morning, folks! š¤ ā¤ļø
Happy Tuesday, friends!
We're cooking up something a little different today! With the cooler October weather settling in, there's nothing better than a homemade supper that fills the kitchen with wonderful aromas.
Today's recipe is Creamy Autumn Chicken, featuring golden, pan-seared chicken breasts nestled in a rich garlic Parmesan sauce with sun-dried tomatoes, spinach, and just a touch of Dijon mustard.
We're serving it alongside crispy butter-roasted potatoes and finishing with a warm fall dessert!
It's delicious enough for company but simple enough for a busy Tuesday evening.
Grab that skillet, friends. Let's get cooking!Ā š„
š Creamy Autumn Chicken
Serves 4ā6
Prep: 15 minutes
Cook: 30 minutes
š„ Ingredients
4 large boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
½ cup chopped sun-dried tomatoes, drained
2 cups fresh baby spinach
1 cup heavy cream
¾ cup chicken broth
¾ cup freshly grated Parmesan cheese
1 teaspoon Dijon mustard
1 teaspoon Italian seasoning
½ teaspoon smoked paprika
½ teaspoon garlic powder
Salt and black pepper to taste
Fresh parsley for garnish
š„ Let's Get Cooking!
1ļøā£ Season that chicken!
Pat the chicken dry. If the breasts are thick, slice them horizontally into thinner cutlets.
Season with salt, pepper, garlic powder, and smoked paprika.
2ļøā£ Get that skillet sizzling!
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken for approximately 4ā5 minutes per side, depending on thickness, until golden brown.
Remove and set aside. The chicken will finish cooking in the sauce.
3ļøā£ Bring on the garlic!
Reduce heat to medium.
Add butter and minced garlic to the skillet.
Cook for approximately 30 seconds, just until fragrant.
Stir in the sun-dried tomatoes.
4ļøā£ Make that creamy Parmesan sauce!
Pour in chicken broth, scraping up the delicious browned bits from the bottom.
Stir in heavy cream, Dijon mustard, and Italian seasoning.
Bring to a gentle simmer for 3ā4 minutes.
5ļøā£ Add the cheese and spinach!
Reduce heat to low.
Gradually stir in Parmesan cheese until smooth.
Add spinach and stir until wilted.
6ļøā£ Finish that chicken!
Return chicken to the skillet and spoon the sauce over the top.
Simmer gently until the chicken reaches an internal temperature of 165°F.
7ļøā£ Serve it up!
Sprinkle with parsley and a little extra Parmesan.
Oh my goodness! That creamy garlic sauce is so good you'll want something to soak up every drop!Ā šā¤ļø

ā MawMaw's Chuckwagon Secret
š Want juicy chicken and a silky-smooth cream sauce?
Don't overcook the chicken while searing it. Let it finish gently in the sauce.
And here's another little trick: add your Parmesan over low heat!
Boiling a cream sauce after adding cheese can cause it to separate or become grainy.
A gentle simmer and freshly grated Parmesan will give you that beautiful creamy finish.
š½ļø Make It a Country Tuesday Supper!
Serve with roasted garlic potatoes, steamed broccoli, honey-glazed carrots, fresh garden salad, or warm homemade biscuits.
And don't forget a big glass of sweet tea!
š And for dessert?
Old-Fashioned Brown Sugar Apple Skillet Cake
Imagine tender cinnamon apples baked into a buttery brown sugar cake, served warm with vanilla ice cream and a drizzle of caramel.
Now that's a sweet way to end a Tuesday!Ā šā
š Tuesday Chuckwagon Encouragement
A Little Kindness Goes a Long Way
Sometimes we get so caught up in everything happening around us that we forget how much a simple act of kindness can mean.
A smile.
A phone call.
A warm meal.
A few words of encouragement.
Or simply taking the time to listen when somebody needs a friend.
We never know what someone else may be going through.
The person smiling beside us may be carrying a burden we know nothing about.
The neighbor who seems quiet may be feeling lonely.
And the friend who always encourages everyone else may need a little encouragement themselves.
Friends, kindness doesn't have to cost a thing to be worth everything to someone.
God gives us opportunities every day to show His love through the way we treat others.
Maybe today you can check on someone, share a meal, or simply remind somebody that they're loved.
You never know when your small act of kindness might be exactly what someone has been praying for. ā¤ļø
š Scripture for Today
Ephesians 4:32 (KJV)
"And be ye kind one to another, tenderhearted, forgiving one another, even as God for Christ's sake hath forgiven you."
