šŸ SUNDAY, OCTOBER 11

🄩 Old-Fashioned Harvest Pot Roast with Butternut Squash & Country Gravy

Good morning, folks! šŸ¤ ā¤ļø

Happy Sunday!

There's just something about Sunday dinner that brings back precious memories.

I think about family gathered around the table, the wonderful smell of a roast cooking, homemade gravy, warm rolls, and everyone taking a little time to enjoy being together.

Today's recipe is a beautiful fall twist on an old-fashioned Sunday pot roast.

We're slowly cooking tender beef with potatoes, carrots, onions, butternut squash, garlic, and herbs.

And we're making a rich homemade gravy from those wonderful pan juices!

🄩 Ingredients

  • 3–4 lb beef chuck roast

  • 2 tablespoons olive oil

  • 1 large onion, quartered

  • 4 cloves garlic, minced

  • 4 large carrots, cut into chunks

  • 1½ lbs baby potatoes

  • 3 cups cubed butternut squash

  • 3 cups beef broth

  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons tomato paste

  • 1 tablespoon Dijon mustard

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • 1 teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Salt and black pepper to taste

  • 2 tablespoons butter

  • 2 tablespoons flour, for gravy

šŸ”„ Let's Make Sunday Dinner!

1ļøāƒ£ Season that roast!Ā Pat the beef dry and season with salt, pepper, garlic powder, and smoked paprika.

2ļøāƒ£ Give it a good sear!Ā Heat olive oil in a large Dutch oven over medium-high heat.

Brown the roast on all sides.

3ļøāƒ£ Build the flavor!Ā Remove the roast and add the onion. Cook for approximately 4–5 minutes.

Add garlic and tomato paste and cook another minute.

4ļøāƒ£ Add that broth!Ā Pour in beef broth, Worcestershire sauce, and Dijon mustard.

Scrape those flavorful browned bits from the bottom of the pot.

Add rosemary and thyme.

5ļøāƒ£ Low and slow!Ā Return the roast to the Dutch oven.

Cover and bake at 300°F for approximately 2½–3 hours.

6ļøāƒ£ Add those vegetables!Ā Add potatoes and carrots, arranging them around the roast.

Continue cooking for approximately 45 minutes.

Add the butternut squash and cook another 30–45 minutes, or until the beef is fork-tender and all the vegetables are cooked through.

7ļøāƒ£ Make that country gravy!Ā Remove the roast and vegetables to a serving platter.

Skim excess fat from the cooking liquid.

For every 2 cups of liquid, melt 2 tablespoons butter in a saucepan and whisk in 2 tablespoons flour.

Cook for one minute, then slowly whisk in the cooking liquid.

Simmer until thickened.

8ļøāƒ£ Bring everybody to the table!Ā Slice or pull apart that tender roast and serve with the vegetables and gravy.

Oh my goodness! That's Sunday dinner right there!Ā ā¤ļø

šŸ„– Sunday's Side — Honey-Butter Country Biscuits

Ingredients

  • 2 cups self-rising flour

  • ½ cup cold butter, cubed

  • ¾ cup cold buttermilk, plus a little more if needed

Honey Butter

  • 4 tablespoons softened butter

  • 2 tablespoons honey

  • Pinch of salt

Directions

Preheat oven to 450°F.

Cut the cold butter into the self-rising flour until crumbly.

Add buttermilk and stir just until a soft dough forms.

Turn onto a lightly floured surface, gently pat to about ¾-inch thickness, and cut into biscuits.

Place on a lined baking sheet.

Bake for approximately 12–15 minutes, until golden.

Mix the honey butter ingredients and spread over warm biscuits.

Now pass that gravy, friends!Ā šŸ˜‹

⭐ MawMaw's Sunday Kitchen Secret

🄩 The secret to tender pot roast is patience!

Chuck roast is perfect for slow cooking because the connective tissue gradually softens and makes the meat tender.

If the roast is still tough, it often needs more cooking time.

And here's another little secret: add your butternut squash toward the end so it stays in beautiful tender pieces instead of disappearing into the gravy.

šŸ½ļø Sunday Supper Extras

Southern green beans, mashed potatoes, cranberry-apple salad, honey-butter biscuits, and sweet tea.

šŸŽ Sunday Dessert

Old-Fashioned Apple Butter Spice Cake

A moist cinnamon-spice cake made with apple butter, topped with cream cheese frosting and chopped toasted pecans.

Serve with hot coffee after Sunday dinner.

šŸ“– Sunday Scripture

"As for me and my house, we will serve the LORD."

— Joshua 24:15 (KJV)

šŸ’œ Weekend Chuckwagon Encouragement

As we head into another October weekend, I want to encourage you to make time for the people God has placed in your life.

Sometimes we get so busy working, cleaning, running errands, and taking care of responsibilities that we forget how quickly time passes.

One day, we look back and realize that some of our most treasured memories weren't expensive vacations or fancy celebrations.

They were the ordinary moments.

Sitting around Grandma's kitchen table.

Helping Mom make biscuits.

Watching Dad cook on the grill.

Listening to family stories we've heard a hundred times.

Laughing together over a meal.

And sometimes, just being thankful that everyone was there.

Friends, don't wait for a special occasion to make a memory.

Cook that family recipe.

Invite somebody to supper.

Call that loved one.

Take those pictures.

Tell the stories.

And most importantly, thank God for the blessings you have today.

Because life can change in an instant, and the moments we share with the people we love are gifts we should never take for granted.

The food brings us to the table, but love is what makes the memories.Ā ā¤ļø
