Good morning,
š¤ Weāre kicking off a new week with a bold, flavorful, and super easy one-pot mealĀ thatās perfect for busy days but still hearty enough to satisfy a hungry crew.
This chuckwagon-style dish brings a little southwestern flair to the trailāsimple ingredients, big flavor, and minimal cleanup!

š®š Ingredients
1 lb ground beef
1 tablespoon oil or bacon grease
1 small onion, diced
2 cloves garlic, minced
1 cup uncooked rice
2 cups beef broth
1 can (14 oz) diced tomatoes (with juice)
1 packet taco seasoning (or 2 tablespoons homemade)
½ teaspoon cumin
½ teaspoon paprika
Salt & pepper to taste
1 cup shredded cheese
Optional: black beans or corn
š„ Chuckwagon Cooking Instructions
1ļøā£ Heat a large cast iron skilletĀ over medium heat.
2ļøā£ Add oil and brown the ground beef until fully cooked.
3ļøā£ Stir in diced onion and garlic, cooking until soft and fragrant.
4ļøā£ Add uncooked rice and stir for 1ā2 minutes to lightly toast.
5ļøā£ Pour in beef broth and diced tomatoes with juice.
6ļøā£ Add taco seasoning, cumin, paprika, salt, and pepper. Stir well.
7ļøā£ Bring to a gentle boil, then reduce heat, cover, and simmer for 18ā20 minutesĀ until rice is tender.
8ļøā£ Sprinkle cheese on top, cover, and let it melt before serving.
