Good morning,

🤠We’re kicking off a new week with a bold, flavorful, and super easy one-pot mealĀ that’s perfect for busy days but still hearty enough to satisfy a hungry crew.

This chuckwagon-style dish brings a little southwestern flair to the trail—simple ingredients, big flavor, and minimal cleanup!

šŸŒ®šŸš Ingredients

  • 1 lb ground beef

  • 1 tablespoon oil or bacon grease

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup uncooked rice

  • 2 cups beef broth

  • 1 can (14 oz) diced tomatoes (with juice)

  • 1 packet taco seasoning (or 2 tablespoons homemade)

  • ½ teaspoon cumin

  • ½ teaspoon paprika

  • Salt & pepper to taste

  • 1 cup shredded cheese

  • Optional: black beans or corn

šŸ”„ Chuckwagon Cooking Instructions

1ļøāƒ£ Heat a large cast iron skilletĀ over medium heat.

2ļøāƒ£ Add oil and brown the ground beef until fully cooked.

3ļøāƒ£ Stir in diced onion and garlic, cooking until soft and fragrant.

4ļøāƒ£ Add uncooked rice and stir for 1–2 minutes to lightly toast.

5ļøāƒ£ Pour in beef broth and diced tomatoes with juice.

6ļøāƒ£ Add taco seasoning, cumin, paprika, salt, and pepper. Stir well.

7ļøāƒ£ Bring to a gentle boil, then reduce heat, cover, and simmer for 18–20 minutesĀ until rice is tender.

8ļøāƒ£ Sprinkle cheese on top, cover, and let it melt before serving.

šŸ„„ Chuckwagon Serving Tip

Serve straight from the skillet with:

  • Tortilla chips

  • Warm tortillas

  • Or a dollop of sour cream

⭐ Campfire Tip

Cook low and steady—keeping the lid on helps trap heat and cook the rice evenly over coals.
