🌵🍲 Chili Champions & Backyard Cooks 🍲🌵Chuckwagon Recipe of the Day – Monday, May 4, 2026🔥 Cowboy Campfire Honey BBQ Chicken & Potato Skillet 🔥

Good morning,! 🤠

We’re kicking off the new week with a sweet, smoky, and savory skillet meal that’s simple to make and packed with bold flavor!

This chuckwagon favorite brings together tender chicken, golden potatoes, and a rich honey BBQ glaze—a perfect one-pan meal for busy days.

🍗🥔🍯 Ingredients

  • 1½ lbs chicken (cubed or sliced)

  • 3–4 medium potatoes, diced

  • 1 tablespoon oil or butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • ¾ cup BBQ sauce

  • 2 tablespoons honey

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • Optional: ½ cup shredded cheese

🔥 Chuckwagon Cooking Instructions

1️⃣ Heat a large cast iron skillet over medium heat.

2️⃣ Add oil and cook diced potatoes for 10–15 minutes until golden and tender. Remove and set aside.

3️⃣ In the same skillet, cook chicken until browned and cooked through.

4️⃣ Add onion and garlic; cook until soft and fragrant.

5️⃣ Return potatoes to the skillet.

6️⃣ Stir in BBQ sauce, honey, pepper, and paprika.

7️⃣ Let cook for 5–7 minutes until everything is coated and slightly caramelized.

8️⃣ Optional: sprinkle cheese on top and let melt.

🥄 Chuckwagon Serving Tip

Serve hot with:

  • Cornbread 🧈

  • Coleslaw

  • Or enjoy it straight from the skillet 🤠

Campfire Tip

Let the sauce caramelize just slightly at the end—that’s where the deep, rich flavor really comes through!
