Happy Sunday! There's nothing quite like coming home after church to the comforting aroma of a homemade meal. Today's chuckwagon favorite is a classic Chicken Pot PieĀ with a buttery Cheddar Herb Biscuit ToppingĀ that's baked until golden brown.
Filled with tender chicken, fresh vegetables, and a rich, creamy gravy, this recipe is the perfect way to gather your family around the table and enjoy the blessings of another beautiful Sunday.

šš„ Ingredients
For the Filling
3 cups cooked chicken, shredded
3 tablespoons butter
1 small onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
1 cup frozen peas
ā cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
1 teaspoon poultry seasoning
½ teaspoon thyme
½ teaspoon black pepper
Salt to taste

2 cups biscuit baking mix
ā cup milk
1 cup shredded sharp cheddar cheese
1 teaspoon dried parsley
2 tablespoons melted butter
š„ Chuckwagon Cooking Instructions
Step 1
Preheat your oven to 375°F.
Step 2
In a large cast iron skillet or Dutch oven, melt the butter over medium heat.
Add the onion, garlic, carrots, and celery. Cook for 5ā6 minutesĀ until the vegetables begin to soften.
Step 3
Sprinkle the flour over the vegetables and stir for 1 minute.
Slowly whisk in the chicken broth and heavy cream until smooth.
Step 4
Add the chicken, peas, poultry seasoning, thyme, salt, and pepper.
Simmer for 8ā10 minutes, until thick and creamy.
Step 5
In a separate bowl, mix the biscuit mix, milk, cheddar cheese, and parsley.
Drop spoonfuls of biscuit dough evenly across the top of the chicken mixture.
Brush the tops with melted butter.
Step 6
Bake for 25ā30 minutes, until the biscuits are golden brown and the filling is bubbling around the edges.
Allow to cool for 5ā10 minutes before serving.
