This one-pot wonder brings together smoky sausage, tender potatoes, and a creamy broth that feels like a hug in a bowl.

  • 3–4 medium potatoes, diced

  • 1 tablespoon butter or oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 cups chicken broth

  • ½ teaspoon paprika

  • ½ teaspoon dried parsley

  • Optional: 1 cup shredded cheese

🔥 Chuckwagon Cooking Instructions

5️⃣ Reduce heat and simmer for 15–20 minutes until potatoes are tender.

6️⃣ Stir in milk, cooked sausage, and seasonings.

7️⃣ Let simmer another 5–10 minutes until creamy and heated through.

8️⃣ Optional: stir in cheese until melted and smooth.

🥄 Chuckwagon Serving Tip

Serve hot with:

  • Warm biscuits 🧈

  • Crusty bread

  • Or crackers for dipping

Campfire Tip

Mash a few potatoes in the pot to naturally thicken the soup—it gives it that rich, rustic texture cowboys loved.
