1 lb smoked sausage, sliced
3–4 medium potatoes, diced
1 small onion, sliced
1 bell pepper, chopped (optional)
2 tablespoons oil or bacon grease
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme
Optional: shredded cheese for topping
🔥 Chuckwagon Cooking Instructions
1️⃣ Heat a large cast iron skillet over medium heat.
2️⃣ Add oil or bacon grease and toss in the diced potatoes. Cook for about 10–12 minutes, stirring occasionally, until they begin to soften and brown.
