Today's chuckwagon favorite is a colorful, hearty meal that's packed with bold flavor! These Smokehouse Stuffed Bell PeppersĀ are filled with seasoned ground beef, smoked sausage, rice, sweet corn, fire-roasted tomatoes, and plenty of melted cheese.
They're a complete meal all in one and perfect for a family supper or sharing with neighbors. One bite, and you'll understand why this recipe deserves a blue ribbon!

š«š„© Ingredients
For the Stuffed Peppers
6 large bell peppers (any color)
1 pound lean ground beef
½ pound smoked sausage, diced
1 small sweet onion, diced
3 cloves garlic, minced
2 cups cooked long-grain rice
1 cup sweet corn
1 can (14.5 oz) fire-roasted diced tomatoes, drained
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper
1 teaspoon Worcestershire sauce
2 cups shredded Colby Jack cheese
š„ Chuckwagon Cooking Instructions
1ļøā£ Preheat your oven to 375°F.
2ļøā£ Cut the tops off the bell peppers and remove the seeds. Place them in a lightly greased baking dish.
3ļøā£ In a large skillet, brown the ground beef, smoked sausage, onion, and garlic. Drain excess grease.
4ļøā£ Stir in the cooked rice, corn, tomatoes, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and black pepper.
5ļøā£ Mix in 1 cup of the shredded cheese.
6ļøā£ Fill each bell pepper generously with the meat mixture.
7ļøā£ Cover with foil and bake for 35 minutes.
8ļøā£ Remove the foil, sprinkle the remaining cheese over each pepper, and bake another 10ā15 minutes, until the cheese is melted and lightly golden.
