Cowboy Campfire Slow-Simmered Beef Stew 🔥
Good morning, ! 🤠There’s no better way to close out the weekend than with a rich, slow-simmered stew—the kind that fills the air with warmth and brings everyone together.
This is a true classic chuckwagon meal… simple ingredients, slow cooking, and deep, comforting flavor.
🥩🥕 Ingredients
1½ lbs beef stew meat
2 tablespoons oil or bacon grease
3 cups beef broth
3–4 potatoes, chopped
2 carrots, sliced
1 celery stalk, chopped
1 small onion, diced
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
½ teaspoon thyme
1 tablespoon tomato paste (optional for richness)
🔥 Chuckwagon Cooking Instructions
1️⃣ Heat a Dutch oven over medium heat.
2️⃣ Add oil and brown the beef on all sides to lock in flavor.
3️⃣ Stir in onion and garlic; cook until fragrant.
4️⃣ Add beef broth, potatoes, carrots, celery, and seasonings.
5️⃣ Stir in tomato paste if using.
6️⃣ Bring to a boil, then reduce heat and cover.
7️⃣ Let simmer low and slow for 1½ to 2 hours, stirring occasionally, until beef is tender and flavors are rich.
🥄 Chuckwagon Serving Tip
Serve hot with:
Warm biscuits 🧈
Crusty bread
Or cornbread for dipping
⭐ Campfire Tip
The longer this stew simmers, the better it gets—keep it low and steady over coals for that authentic cowboy flavor.
