š² Hearty Chicken, Vegetable & Noodle Camp Soup
A simple, soul-warming classicāclear broth, tender chicken, and soft noodles just like the trail cooks made.
Serves:Ā 6ā8Prep Time:Ā 10 minutesCook Time:Ā 40 minutes
This soup is calm and comfortingāideal for settling into routine, warming the body, and feeding everyone well.
š Ingredients
2 tbsp butter or olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
2 cups cooked shredded chicken
6 cups chicken broth
1½ cups egg noodles (or broken spaghetti)
1 tsp thyme
½ tsp black pepper
½ tsp salt (to taste)
Optional: chopped parsley at the end
š³ Instructions
Build the BaseIn a Dutch oven, heat butter over medium heat. Add onion, garlic, carrots, and celery. Cook until softened and fragrant (about 5 minutes).
Add Chicken & BrothStir in shredded chicken, broth, thyme, salt, and pepper. Bring to a gentle boil.
Add NoodlesStir in noodles. Reduce heat and simmer 10ā12 minutes, until noodles are tender.
Finish & ServeTaste and adjust seasoning. Sprinkle with parsley if using.Serve hot with crackers, biscuits, or crusty bread.
