A simple, soul-warming classic—clear broth, tender chicken, and soft noodles just like the trail cooks made.

This soup is calm and comforting—ideal for settling into routine, warming the body, and feeding everyone well.

šŸ” Ingredients

  • 2 tbsp butter or olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cups cooked shredded chicken

  • 6 cups chicken broth

  • 1½ cups egg noodles (or broken spaghetti)

  • 1 tsp thyme

  • ½ tsp black pepper

  • ½ tsp salt (to taste)

  • Optional: chopped parsley at the end

  1. Build the BaseIn a Dutch oven, heat butter over medium heat. Add onion, garlic, carrots, and celery. Cook until softened and fragrant (about 5 minutes).

  2. Add Chicken & BrothStir in shredded chicken, broth, thyme, salt, and pepper. Bring to a gentle boil.

  3. Add NoodlesStir in noodles. Reduce heat and simmer 10–12 minutes, until noodles are tender.

  4. Finish & ServeTaste and adjust seasoning. Sprinkle with parsley if using.Serve hot with crackers, biscuits, or crusty bread.
