šŸ² Hearty Chicken, Potato & Herb Camp Soup

A gentle, nourishing soup—simple, filling, and perfect for a calm winter day.

Serves:Ā 6–8Cook Time:Ā 45 minutes

Ingredients

  • 2 tbsp butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 medium potatoes, diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cups cooked shredded chicken

  • 5 cups chicken broth

  • 1 tsp thyme

  • ½ tsp black pepper

  • Salt to taste

Instructions

  1. Melt butter in a Dutch oven; sautƩ onion and garlic until fragrant.

  2. Add potatoes, carrots, and celery; cook 3–4 minutes.

  3. Stir in chicken, broth, and seasonings.

  4. Simmer 35–40 minutesĀ until vegetables are tender.

  5. Serve with biscuits or crackers.
