š Hearty Italian Sausage, Tomato & Tortellini Camp Soup
A rich, comforting winter soup ā savory sausage, tender pasta, and a creamy tomato broth.
Serves:Ā 6ā8Cook Time:Ā 35ā40 minutes
This one feels warm and welcoming ā a little extra cozy without being complicated. Perfect for a cold February evening.
š„£ Ingredients
1 lb Italian sausage (mild or sweet)
2 tbsp butter or olive oil
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 tsp Italian seasoning
½ tsp black pepper
Salt to taste
1 package (9ā12 oz) cheese tortellini
½ cup heavy cream or half-and-half
Optional: handful of fresh spinach

Brown the SausageIn a Dutch oven, cook sausage until browned. Remove excess grease if needed.
Build the BaseAdd onion and garlic; cook until fragrant.
Add Broth & TomatoesStir in broth, diced tomatoes, tomato sauce, Italian seasoning, pepper, and salt.Bring to a gentle simmer.
Add TortelliniStir in tortellini and cook 8ā10 minutes, until tender.
