This soup feels a little special without being complicated — perfect for sharing on a chilly February evening.

  • 2 tbsp butter or olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups cooked shredded chicken

  • 4 cups chicken broth

  • 1 can (14.5 oz) diced tomatoes

  • ½ cup sun-dried tomatoes (optional but beautiful flavor)

  • 1 tsp Italian seasoning

  • ½ tsp black pepper

  • Salt to taste

  • 1 cup heavy cream or half-and-half

  • 1 cup small pasta (like ditalini or shells)
