Happy Friday! We're heading into the weekend with some serious country comfort food.

Today's Autumn Cowboy Beef Tips & Mushroom GravyĀ features tender bites of beef simmered low and slow with mushrooms, onions, garlic, and a rich brown gravy. We're spooning all that goodness over buttery garlic cheddar mashed potatoes.

This is the kind of supper that makes you want to pull up a chair, pour a glass of sweet tea, and stay awhile. ā¤ļø

🄩 Cowboy Beef Tips & Mushroom Gravy

Ingredients

  • 2½ lbs beef sirloin tips or chuck roast, cut into 1½-inch pieces

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • 1 large sweet onion, sliced

  • 8 oz baby bella mushrooms, sliced

  • 4 cloves garlic, minced

  • 3 cups beef broth

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon tomato paste

  • 1 teaspoon smoked paprika

  • 1 teaspoon onion powder

  • ½ teaspoon dried thyme

  • ½ teaspoon black pepper

  • Salt to taste

  • 2 tablespoons cornstarch

  • 3 tablespoons cold water

šŸ„” Garlic Cheddar Mashed Potatoes

  • 3 lbs Yukon Gold or russet potatoes, peeled and cubed

  • 5 tablespoons butter

  • ½–¾ cup warm milk or cream

  • 3 cloves roasted or minced garlic

  • 1½ cups shredded sharp cheddar

  • ¼ cup sour cream

  • Salt and black pepper to taste

  • Chopped chives or green onions for garnish

šŸ”„ Let's Get Cooking!

1ļøāƒ£ Sear that beef.Pat the beef dry and season with salt, pepper, smoked paprika, and onion powder.

Heat the olive oil in a large Dutch oven or cast-iron skillet over medium-high heat.

Working in batches, sear the beef until beautifully browned. Remove and set aside.

2ļøāƒ£ Cook the onions & mushrooms. šŸ„Reduce the heat to medium and add the butter.

Add the onions and mushrooms and cook for 6–8 minutesĀ until softened and golden. Stir in the garlic and tomato paste and cook for another minute.

3ļøāƒ£ Build that country gravy.Slowly pour in the beef broth, scraping all those delicious browned bits from the bottom of the pan.

Add Worcestershire sauce and thyme.

4ļøāƒ£ Let it simmer.Return the beef to the pot.

Cover and gently simmer until tender. If you're using sirloin tips, start checking around 30–40 minutes; chuck may need 1½–2 hoursĀ to become fork-tender.

5ļøāƒ£ Thicken the gravy.Whisk together the cornstarch and cold water.

Slowly stir it into the simmering gravy until it reaches the thickness you like.

šŸ„” Make Those Cheddar Mashed Potatoes

6ļøāƒ£Ā Boil the potatoes in salted water until fork-tender, about 15–20 minutes.

7ļøāƒ£Ā Drain them well and return them to the warm pot for a minute to let excess moisture evaporate.

8ļøāƒ£Ā Mash with butter, garlic, sour cream, and enough warm milk to make them creamy.

Fold in the cheddar until it's melted and deliciously cheesy. šŸ§€

Don't crowd the skillet. If you pile all the meat in at once, it'll steam instead of developing that gorgeous brown crust.

And whatever you do, don't wash out that skillet! Those little browned bits stuck to the bottom are pure flavor. Scrape them right into your gravy. 🤠
