🍗🍎 Sunday Harvest Stuffed Chicken with Apple-Cranberry Cornbread Dressing 🍎🍗

Good morning, folks! 🤠🍂

Since it's Sunday, let's make something a little extra special for the family table! Today's recipe is juicy chicken breasts stuffed with homemade apple-cranberry cornbread dressing, baked in a savory herb butter sauce and finished with a touch of maple.

It's got all those wonderful harvest flavors without being too sweet—and it makes a beautiful Sunday dinner! ❤️

🍗 Chicken Ingredients

  • 4 large boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 3 tablespoons butter, melted

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon rubbed sage

  • ½ teaspoon dried thyme

  • ½ teaspoon smoked paprika

  • Salt and black pepper to taste

  • ½ cup chicken broth

  • 1 tablespoon pure maple syrup

🍎 Apple-Cranberry Cornbread Dressing

  • 3 cups crumbled prepared cornbread

  • 1 tablespoon butter

  • 1 small apple, finely diced

  • ½ small sweet onion, diced

  • 1 celery stalk, diced

  • ⅓ cup dried cranberries

  • ½ cup chicken broth, plus more if needed

  • ½ teaspoon rubbed sage

  • ½ teaspoon thyme

  • ¼ teaspoon black pepper

  • ½ cup chopped pecans, optional

🔥 Let's Get Cooking!

1️⃣ Make the dressing. Melt butter in a skillet and sauté the onion, celery, and apple for about 5 minutes.

2️⃣ Combine the vegetables and apple with the crumbled cornbread, cranberries, sage, thyme, pepper, and optional pecans. Add enough chicken broth to make the mixture moist but not soggy.

3️⃣ Prepare the chicken. Carefully cut a pocket into the side of each chicken breast without slicing all the way through.

4️⃣ Stuff each chicken breast with the cornbread dressing. Secure with toothpicks if necessary.

5️⃣ Season it up! Combine the garlic powder, onion powder, sage, thyme, paprika, salt, and pepper. Rub the seasoning over the chicken.

6️⃣ Sear the chicken. Heat olive oil in an oven-safe skillet and brown the stuffed breasts for about 2–3 minutes per side.

7️⃣ Make the Sunday sauce. Mix the melted butter, chicken broth, and maple syrup. Pour it around the chicken.

8️⃣ Bake at 375°F for approximately 20–30 minutes, depending on thickness, until the thickest part of the chicken and the center of the stuffing both reach 165°F.

Let the chicken rest for 5 minutes before serving.

⭐ MawMaw's Sunday Kitchen Secret

🍎 Toast your cornbread first!

Spread crumbled cornbread on a baking sheet and toast it for about 10 minutes before making the dressing. It helps the bread soak up all those wonderful apple, herb, and chicken flavors without becoming mushy.
