šŸ„©šŸ§… Harvest French Onion Meatballs with Garlic-Parmesan Mashed PotatoesĀ šŸ„”šŸ§€

Good morning, folks! šŸ¤ šŸ‚

Today's fall supper takes good old-fashioned meatballs and gives them a country French-onion twist!Ā We're making tender beef meatballs, smothering them in caramelized onions and a rich beef gravy, topping everything with melted cheese, and serving it over creamy garlic-Parmesan mashed potatoes.

This one's warm, hearty, budget-friendly, and made for a cool evening around the family table. ā¤ļø

🄩 Country Meatballs

  • 2 lbs ground beef

  • 2 large eggs

  • ¾ cup seasoned breadcrumbs

  • ½ cup milk

  • ½ cup finely diced onion

  • 2 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • ½ teaspoon dried thyme

  • ½ teaspoon black pepper

  • 1 teaspoon salt

  • 2 tablespoons butter or olive oil

šŸ§… French Onion Gravy

  • 2 large sweet onions, thinly sliced

  • 3 tablespoons butter

  • 1 teaspoon brown sugar

  • 3 cloves garlic, minced

  • 3 cups beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • 2 tablespoons all-purpose flour

  • Salt and black pepper to taste

  • 1½ cups shredded GruyĆØre, Swiss, or mozzarella cheese

šŸ„” Garlic-Parmesan Mashed Potatoes

  • 3 lbs Yukon Gold or russet potatoes, peeled and cubed

  • 5 tablespoons butter

  • ½–¾ cup warm milk or cream

  • 3 cloves garlic, minced or roasted

  • ¾ cup freshly grated Parmesan

  • ¼ cup sour cream

  • Salt and pepper to taste

  • Chopped parsley for garnish

šŸ”„ Let's Get Cooking!

1ļøāƒ£ Make those meatballs.Ā Combine the beef, eggs, breadcrumbs, milk, onion, garlic, Worcestershire, and seasonings. Mix gently and form into about 1½-inch meatballs.

2ļøāƒ£ Brown 'em up!Ā Heat butter or oil in a large oven-safe skillet. Brown the meatballs in batches, turning so they develop a nice crust. Transfer them to a plate.

3ļøāƒ£ Take your time with those onions. šŸ§…Ā Add 3 tablespoons butter and the sliced onions to the skillet. Cook over medium-low heat for about 20–25 minutes, stirring occasionally. Add the brown sugar during the final few minutes.

We're looking for soft, deep golden onions—not burned ones!

4ļøāƒ£ Build the gravy.Ā Add the garlic and cook for 30 seconds. Sprinkle flour over the onions and stir for about 1 minute.

Slowly add the beef broth while stirring. Add Worcestershire and thyme and simmer until the gravy begins to thicken.

5ļøāƒ£ Bring everything together.Ā Return the meatballs to the skillet. Cover and gently simmer for approximately 10–15 minutes, until the centers reach 160°F.

6ļøāƒ£ Make it cheesy! šŸ§€Ā Sprinkle the cheese over the meatballs and place the skillet under the broiler briefly until melted and bubbly. Watch it closely!

šŸ„” Make Those Mashed Potatoes

Boil the potatoes in salted water until fork-tender, about 15–20 minutes.

Drain well and mash with butter, garlic, sour cream, and enough warm milk to make them creamy.

Fold in the Parmesan, season to taste, and finish with parsley.

Now spoon those potatoes onto a plate and pile the cheesy French-onion meatballs and gravy right over the top!Ā šŸ˜‹

⭐ MawMaw's Chuckwagon Secret

šŸ§… Don't rush caramelized onions!

High heat may brown them quickly, but low-and-slow cooking develops that deep, sweet onion flavor we're after.

And here's another little trick: after browning the meatballs, use a splash of beef broth to loosen those browned bits from the skillet. That's flavor—don't leave it behind!

šŸ’œ Chuckwagon Encouragement

Some of the best things simply can't be rushed.

Those onions need time to caramelize. A good meal needs time to cook. And sometimes the plans God has for our lives need time too.

We may look at our circumstances and wonder, "Lord, why is this taking so long?"

But waiting doesn't mean God isn't working.

There are things He may be arranging that we cannot see yet.

Keep praying. Keep trusting. Keep doing what He's placed before you today.

God's timing is worth waiting for.Ā ā¤ļø

"Rest in the LORD, and wait patiently for him:"
