šš Harvest Apple Cider Chicken & Butternut Squash SkilletĀ šš
Good morning, folks! š¤ š
September is here, and we're keeping those cozy fall flavors coming! Today's recipe is a beautiful one-skillet harvest supperĀ filled with juicy chicken, roasted butternut squash, apples, onions, bacon, and a savory apple-cider maple glaze.
It's colorful, hearty, and perfect for one of those early September evenings when you're ready for fallāeven if the weather hasn't gotten the message yet! šš
š Harvest Chicken Ingredients
6 boneless, skinless chicken thighs
6 slices bacon, chopped
3 cups butternut squash, peeled and cubed
2 crisp apples, sliced
1 medium sweet onion, sliced
3 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon dried thyme
½ teaspoon rubbed sage
½ teaspoon smoked paprika
Salt and black pepper to taste
š Apple Cider Glaze
1 cup apple cider
2 tablespoons pure maple syrup
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
½ cup chicken broth
1 teaspoon cornstarch mixed with 1 tablespoon cold water
š„ Let's Get Cooking!
1ļøā£ Cook the bacon.In a large cast-iron skillet, cook the chopped bacon until crispy. Remove it and set aside, leaving about 2 tablespoons of those flavorful drippings behind.
2ļøā£ Brown the chicken.Season the chicken with thyme, sage, smoked paprika, salt, and pepper.
Sear the chicken in the bacon drippings for about 4ā5 minutes per side, until beautifully golden. Remove and set aside.
3ļøā£ Start the harvest vegetables. šAdd the olive oil and butter to the skillet. Toss in the butternut squash and onion.
Cook for about 7ā8 minutes, stirring occasionally.
Add the apples and garlic and cook another 2 minutes.
4ļøā£ Make that cider glaze. šWhisk together the apple cider, maple syrup, Dijon mustard, vinegar, Worcestershire sauce, and chicken broth.
Pour it into the skillet and bring to a gentle simmer.
5ļøā£ Bring everything together.Return the chicken to the skillet, nestling it among the apples and squash.
Cover and simmer for about 10ā15 minutes, or until the chicken reaches 165°FĀ and the squash is tender.
6ļøā£ Thicken the sauce.Remove the chicken briefly if needed and stir in the cornstarch mixture. Simmer for a minute or two until the cider sauce becomes glossy and slightly thickened.
7ļøā£ Finish it off!Return the chicken to the skillet and sprinkle that crispy bacon all over the top.
Spoon plenty of apple-cider glaze over everything before serving. š
