🥘🧀 Smoky Cowboy Chicken Pot Pie with Cheddar Cornbread Crust 🌽🍗

Good morning, folks! 🤠🍂

We're bringing out the cast-iron skillet today for a fall supper that's pure country comfort! Instead of a traditional pie crust, we're topping a creamy, smoky chicken-and-vegetable filling with a golden cheddar cornbread crust.

It's warm, filling, easy enough for a weeknight, and one of those meals where everybody wants to scrape the last little bit out of the skillet! ❤️

🍗 Cowboy Chicken Filling

  • 2 lbs boneless, skinless chicken thighs or breasts, cubed

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 medium sweet onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 cup frozen corn

  • 1 cup frozen peas

  • ⅓ cup all-purpose flour

  • 2½ cups chicken broth

  • ½ cup heavy cream or half-and-half

  • 1 teaspoon smoked paprika

  • ½ teaspoon dried thyme

  • ½ teaspoon rubbed sage

  • ½ teaspoon garlic powder

  • Salt and black pepper to taste

  • 4 slices cooked bacon, crumbled, optional

🌽 Cheddar Cornbread Crust

  • 1 cup yellow cornmeal

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • 1 cup buttermilk

  • 2 large eggs

  • ¼ cup melted butter

  • 1 tablespoon honey

  • 1 cup shredded sharp cheddar cheese

🔥 Let's Get Cooking!

1️⃣ Brown the chicken.Preheat your oven to 400°F. Heat butter and olive oil in a large oven-safe skillet. Season the chicken with salt, pepper, smoked paprika, and garlic powder.

Cook until lightly browned, then remove it to a plate. It doesn't need to be completely cooked yet.

2️⃣ Cook those vegetables.Add the onion, carrots, and celery to the same skillet. Cook for about 5–6 minutes, then add the garlic.

3️⃣ Make that creamy country gravy.Sprinkle the flour over the vegetables and stir for about a minute.

Slowly pour in the chicken broth while stirring. Add the cream, thyme, and sage.

Simmer until the sauce begins to thicken.

4️⃣ Fill that skillet!Return the chicken to the pan and stir in the corn, peas, and optional bacon. Simmer gently for a few minutes, then remove from the heat.

🌽 Make That Cornbread Topping!

5️⃣ Combine the cornmeal, flour, baking powder, and salt.

6️⃣ In another bowl, whisk together the buttermilk, eggs, melted butter, and honey.

7️⃣ Stir the wet ingredients into the dry just until combined, then fold in the cheddar.

8️⃣ Spoon the cornbread batter over the chicken filling and gently spread it toward the edges.

Bake for approximately 20–25 minutes, until the cornbread is golden and the chicken has reached 165°F.

Brush the top with a little melted butter when it comes out of the oven. 🧈

🌽 Don't overmix that cornbread!

A few little lumps in the batter are perfectly fine. Mixing too much can make cornbread tough instead of light and tender.

And here's another trick: sprinkle a small handful of cheddar over the cornbread during the final 5 minutes of baking for a bubbly, golden cheesy top. 🧀

🍽️ Serve It Up With

🫘 Southern green beans with bacon🥗 Apple-cranberry harvest salad🍠 Maple-roasted sweet potatoes🍎 Homemade applesauce🧋 Sweet tea or cold apple cider

🍂 And for dessert?

🍎 Brown Sugar Cinnamon Apple Pudding Cake

Serve it warm with vanilla ice cream and a drizzle of caramel sauce. 😋
