š¶ļøš„ Smoky Cowboy White Chicken Chili with Bacon & Roasted Green Chiles š²š„

Happy Wednesday, friends!
Now that fall has officially arrived, I thought it was time to bring out a big pot of CHILI! But today, we're changing things up a little.
Instead of our traditional red chili, we're making a Smoky Cowboy White Chicken Chili loaded with tender chicken, white beans, roasted green chiles, sweet corn, crispy bacon, and a rich, creamy broth.
We're finishing it with pepper jack cheese, fresh cilantro, and a squeeze of lime.
And because we're Chili Champions & Backyard Cooks, I'm sharing a little cook-off secret to help take this chili from good to championship worthy! š

š¶ļø Smoky Cowboy White Chicken Chili
Servings: 6ā8 Prep Time: 20 minutes Cook Time: 40ā45 minutes Heat Level: Mild to medium, depending on your peppers
š Ingredients
2 lbs boneless, skinless chicken thighs or breasts
6 slices thick-cut bacon, chopped
1 tablespoon olive oil, if needed
1 large sweet onion, diced
1 poblano pepper, roasted, peeled, and diced
2 cans (4 oz each) diced green chiles
4 cloves garlic, minced
3 cans (15 oz each) Great Northern or cannellini beans, drained and rinsed
1½ cups sweet corn
4 cups chicken broth
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
½ teaspoon dried oregano
½ teaspoon onion powder
¼ teaspoon cayenne pepper, optional
Salt and black pepper to taste
š§ Creamy Chili Finish
4 oz cream cheese, softened
½ cup sour cream
1 cup shredded pepper jack cheese
1 tablespoon fresh lime juice
¼ cup chopped fresh cilantro, optional
š„ Cowboy Chili Toppings
Reserved crispy bacon
Shredded pepper jack or Monterey Jack cheese
Sliced green onions
JalapeƱo slices
Crushed tortilla chips
Fresh cilantro
Lime wedges
š„ Let's Get Cooking!
1ļøā£ Start With That Bacon!
Heat a large Dutch oven over medium heat.
Add the chopped bacon and cook until crispy.
Remove the bacon with a slotted spoon and set it aside.
Leave approximately 2 tablespoons of bacon drippings in the pot.
We're building flavor right from the beginning! š¤
2ļøā£ Brown That Chicken!
Season the chicken with salt, pepper, smoked paprika, and cumin.
Add it to the Dutch oven and brown for approximately 3ā4 minutes per side.
Remove and set aside.
The chicken doesn't need to be fully cooked yet because it'll finish cooking in the chili.
3ļøā£ Bring On Those Peppers!
Add the diced onion and poblano pepper to the pot.
Cook for approximately 5 minutes until softened.
Add the garlic and diced green chiles.
Cook another minute.
4ļøā£ Build That Chili!
Pour in the chicken broth, scraping all those wonderful browned bits from the bottom of the Dutch oven.
Add:
White beans
Sweet corn
Chili powder
Oregano
Onion powder
Optional cayenne
Return the chicken to the pot.
Bring to a gentle simmer, cover, and cook for approximately 20ā25 minutes, until the chicken reaches 165°F and is tender enough to shred.
5ļøā£ Shred That Chicken!
Remove the chicken and shred it with two forks.
Return it to the chili.
6ļøā£ Make It Creamy!
Here's where the magic happens!
Scoop approximately 1½ cups of the beans and broth into a separate bowl.
Mash them with a fork or potato masher, then stir them back into the pot.
This naturally thickens the chili without needing flour!
Reduce the heat to low.
Stir in the softened cream cheese until melted.
Add the sour cream and pepper jack cheese, stirring until everything is creamy.
Don't let the chili boil after adding the dairy.
7ļøā£ Finish Like a Champion!
Stir in the fresh lime juice and cilantro.
Taste and adjust the seasonings.
Ladle into big bowls and finish with crispy bacon, cheese, green onions, and crushed tortilla chips.
Oh my goodness! That's a bowl of cowboy comfort right there! ā¤ļø

Want chili that stands out at a cook-off? Build your flavor in layers!
Don't just throw everything into the pot at once.
Brown the bacon first, sear the chicken in those flavorful drippings, and cook your onions and peppers before adding the broth.
And here's another trick:
Add your lime juice at the END!
That little splash of acidity brightens the smoky, creamy flavors and keeps the chili from tasting too heavy.
For an extra smoky flavor, roast your poblano pepper over a grill or under the broiler until the skin blisters. Let it steam in a covered bowl, peel away the loose skin, and dice it.
That's how we turn an ordinary pot of chili into something folks remember! š„

š Wednesday Chuckwagon Encouragement
As I was thinking about today's recipe, something came to mind.
Sometimes we look at the different things happening in our lives and wonder how God could possibly use them all together.
Some seasons have been sweet.
Some have been bitter.
Some have brought joy, and others have brought tears.
But just like the ingredients in today's chili, each one brings something different to the pot.
We may not understand why God allows us to walk through certain valleys, but I can tell you from my own life that some of my greatest testimonies came from some of my hardest trials.
God didn't waste those moments.
He used them to teach me, strengthen my faith, and help me encourage someone else walking through a similar season.
So if today feels a little overwhelming, remember that your story isn't finished.
God can bring beauty from ashes, purpose from pain, and a testimony from the very thing you thought would break you.
