Happy Monday, friends! We're starting a brand-new week with a big pot of country comfort food!
With the first official day of fall arriving tomorrow, I thought we'd welcome the season with something that reminds us of Grandma's kitchen, cool evenings, and gathering around the table with family.
Today's Cowboy Harvest Beef Stew is loaded with tender beef, potatoes, carrots, sweet corn, onions, and a rich, savory broth. But we're not stopping there!
We're topping this delicious stew with fluffy cheddar cornbread dumplings that cook right in the pot and soak up all that wonderful flavor.

š„© Cowboy Harvest Beef Stew
Ingredients
2½ lbs beef chuck roast, cut into 1½-inch cubes
3 tablespoons olive oil
1 large sweet onion, diced
4 carrots, sliced
3 celery stalks, sliced
4 medium Yukon Gold potatoes, cubed
1 cup sweet corn
8 oz baby bella mushrooms, sliced
4 cloves garlic, minced
3 tablespoons tomato paste
4 cups beef broth
1 cup tomato juice
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar, optional
1 teaspoon smoked paprika
1 teaspoon dried thyme
½ teaspoon dried rosemary
½ teaspoon onion powder
2 bay leaves
Salt and black pepper to taste
2 tablespoons cornstarch mixed with 2 tablespoons cold water, if needed
š½ Cheddar Cornbread Dumplings
Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon dried parsley
1 cup shredded sharp cheddar
2 tablespoons melted butter
1 large egg
¾ cup buttermilk, plus a little more if needed

1ļøā£ Brown That Beef!
Pat the beef dry and season with salt, pepper, and smoked paprika.
Heat olive oil in a large Dutch oven over medium-high heat.
Brown the beef in batches until it develops a beautiful crust.
Remove the beef and set aside.
Don't overcrowd that pot! We want browned beef, not steamed beef. š¤
2ļøā£ Build Those Country Flavors
Add the onion, carrots, celery, and mushrooms to the same pot.
Cook for approximately 5ā7 minutes.
Add the garlic and tomato paste and cook another minute.

Return the beef to the Dutch oven.
Add:
Beef broth
Tomato juice
Worcestershire sauce
Brown sugar, if using
Thyme
Rosemary
Onion powder
Bay leaves
Stir everything together.
Bring to a gentle simmer, cover, and cook over low heat for approximately 1½ hours, stirring occasionally.

Once the beef is beginning to become tender, add the potatoes and corn.
Continue simmering for another 25ā35 minutes, until the beef and potatoes are fork-tender.
If you'd like a thicker stew, stir in the cornstarch mixture and simmer until the broth thickens.
Remove the bay leaves.

5ļøā£ Mix the Dry Ingredients
In a bowl, combine:
Cornmeal
Flour
Baking powder
Salt
Garlic powder
Parsley
Stir in the shredded cheddar.

Whisk together the melted butter, egg, and buttermilk.
Gently combine with the dry ingredients until a soft, thick dough forms.
Don't overmix!
7ļøā£ Drop Those Dumplings!
Make sure the stew is gently simmering.
Drop heaping tablespoons of dumpling dough over the surface of the stew, leaving a little space between them.
Cover the Dutch oven tightly.
Cook over low heat for approximately 15ā20 minutes, until the dumplings are fluffy and cooked through.
Avoid lifting the lid while they cook because the steam helps them rise.

Chuck roast contains connective tissue that softens during a long, gentle simmer.
If your beef is still tough, it probably needs more time.
Don't turn up the heat trying to rush it. Keep the stew gently bubbling until the beef becomes fork-tender.
And here's another little secret: a tablespoon of apple cider vinegar stirred into the finished stew can brighten all those rich, savory flavors!

Maybe you've faced challenges, disappointments, or changes you never saw coming.
But look at you!
You're still here.
God has carried you through every single day, including the ones when you didn't know how you were going to make it.
And just like a pot of stew needs time for all those ingredients to come together, sometimes God is working things out in our lives that we cannot see yet.
Don't give up because your season of waiting has been longer than you expected.
Keep trusting Him.
Keep doing what He's called you to do.
