Good morning, 🤠Today’s chuckwagon favorite is a smoky, hearty, and flavor-packed skillet meal that brings together tender pulled pork and crispy potatoes in one pan.
It’s simple, satisfying, and perfect for using leftover pork or making something special from scratch!
🍖🥔 Ingredients
2 cups cooked pulled pork (or shredded pork)
3–4 medium potatoes, diced
1 tablespoon oil or bacon grease
1 small onion, diced
2 cloves garlic, minced
½ cup BBQ sauce
½ teaspoon black pepper
½ teaspoon smoked paprika
Optional: ½ cup shredded cheese
🔥 Chuckwagon Cooking Instructions
1️⃣ Heat a large cast iron skillet over medium heat.
2️⃣ Add oil and cook diced potatoes for 12–15 minutes until golden and crispy.
3️⃣ Add onion and garlic; cook until soft and fragrant.
4️⃣ Stir in pulled pork and cook until heated through.
5️⃣ Add BBQ sauce, pepper, and paprika. Mix well.
6️⃣ Let cook for another 5–7 minutes until everything is hot and slightly caramelized.
7️⃣ Optional: sprinkle cheese on top and let melt.
🥄 Chuckwagon Serving Tip
Serve hot with:
Toast or biscuits 🧈
Coleslaw
Or top with a fried egg 🍳 for a breakfast twist
⭐ Campfire Tip
Cook potatoes low and slow first to get that perfect crispy texture—this makes the whole dish shine!
