Today's recipe is some serious country comfort food! We're making tender, juicy steak bites smothered in caramelized onions, mushrooms, and a rich brown gravy, served alongside crispy garlic-butter potatoes loaded with bacon and melted cheddar.

Cowboy Steak Bites
2 lbs sirloin steak, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons butter
1 large sweet onion, sliced
8 oz mushrooms, sliced
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
2 cups beef broth
2 tablespoons flour
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and black pepper to taste
š„ Loaded Garlic Butter Potatoes
2 lbs baby potatoes, quartered
3 tablespoons melted butter
3 cloves garlic, minced
1 teaspoon ranch seasoning
½ teaspoon smoked paprika
1½ cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
3 green onions, sliced
Sour cream, optional
š„ Let's Get Cooking!
1ļøā£ Roast those potatoes.Preheat the oven to 425°F. Toss the potatoes with melted butter, garlic, ranch seasoning, and smoked paprika. Roast for 30ā35 minutes, turning halfway through.
2ļøā£ Sear the steak.Season the steak bites with smoked paprika, garlic powder, onion powder, salt, and pepper. Heat olive oil in a cast-iron skillet over medium-high heat and sear the steak in batches until browned. Remove and set aside.
3ļøā£ Make those onions & mushrooms.Add butter and sliced onions to the same skillet. Cook until the onions begin to caramelize, then add the mushrooms and garlic.
4ļøā£ Make the gravy.Sprinkle the flour over the onions and mushrooms and stir for about a minute. Slowly pour in the beef broth and Worcestershire sauce, stirring until smooth.
5ļøā£ Bring the steak back.Return the steak bites to the skillet and simmer briefly until the gravy thickens and the steak reaches your preferred doneness.
6ļøā£ Load those potatoes!Remove the roasted potatoes from the oven and cover them with cheddar and bacon. Bake another 3ā5 minutesĀ until the cheese is bubbly. Finish with green onions and a spoonful of sour cream if you'd like.
