Good morning, 🤠There’s no better way to wrap up the weekend than with a slow-cooked, tender, melt-in-your-mouth pot roast—a true chuckwagon classic that brings comfort to the table.

This dish is all about simple ingredients, slow cooking, and rich, deep flavor—just like the meals that gathered cowboys around the fire after a long week on the trail.

🥩🥕 Ingredients

  • 2–3 lb beef roast

  • 2 tablespoons oil or bacon grease

  • 4 cups beef broth

  • 4–5 potatoes, chopped

  • 3 carrots, sliced

  • 1 celery stalk, chopped

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme or rosemary

🔥 Chuckwagon Cooking Instructions

1️⃣ Heat a Dutch oven over medium-high heat.

2️⃣ Add oil and sear the roast on all sides until browned.

3️⃣ Add onion and garlic, cooking until fragrant.

4️⃣ Pour in beef broth and add potatoes, carrots, celery, and seasonings.
