Crockpot Creamy Ranch Chicken & RiceĀ šš
Ingredients:
4 boneless, skinless chicken breasts (or thighs)
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 packet ranch seasoning mix (or 3 tbsp homemade ranch blend)
1 cup shredded cheddar cheese
1 cup uncooked long-grain rice
1 cup frozen mixed vegetables (optional)
Salt & black pepper, to taste
Garnish: chopped parsley or crispy bacon bits
Instructions:
Spray the crockpot with non-stick cooking spray.
Place chicken in the bottom.
In a bowl, mix together cream of chicken soup, broth, ranch seasoning, salt, and pepper. Pour over the chicken.
Sprinkle uncooked rice evenly over top and gently press down.
Add vegetables if using.
Cover and cook on Low for 6ā7 hoursĀ or High for 3ā4 hours, until chicken and rice are tender.
Shred chicken gently and stir in shredded cheese.
Garnish with parsley or bacon before serving.
