š² Creamy Sausage, Potato & Spinach Camp Soup
A rich-but-humble winter soupāsmoky sausage, tender potatoes, and a touch of greens for balance.
Serves:Ā 6ā8Cook Time:Ā 40ā45 minutes
This soup feels nourishing and filling without being heavyājust right for a cold day when you want comfort with a little extra goodness.
š„ Ingredients
1 lb smoked sausage, sliced
2 tbsp butter
1 small onion, diced
2 cloves garlic, minced
4 medium potatoes, diced
4 cups chicken broth
1 cup milk or half-and-half
2 cups fresh spinach (or kale), chopped
½ tsp smoked paprika
½ tsp black pepper
Salt to taste
š³ Instructions
Brown the SausageIn a Dutch oven, lightly brown sausage slices. Remove and set aside.
Build the BaseMelt butter in the same pot. Add onion and garlic; cook until fragrant.
Add Potatoes & BrothStir in potatoes and broth. Bring to a gentle boil, then reduce heat.
SimmerCook 20ā25 minutes, until potatoes are tender.
Finish CreamyStir in sausage, milk, spinach, paprika, salt, and pepper.Simmer 5ā8 minutes, just until greens wilt.
