🍲 Creamy Sausage, Potato & Spinach Camp Soup
A rich-but-humble winter soup—smoky sausage, tender potatoes, and a touch of greens for balance.
Serves: 6–8Cook Time: 40–45 minutes
This soup feels nourishing and filling without being heavy—just right for a cold day when you want comfort with a little extra goodness.
🥔 Ingredients
1 lb smoked sausage, sliced
2 tbsp butter
1 small onion, diced
2 cloves garlic, minced
4 medium potatoes, diced
4 cups chicken broth
1 cup milk or half-and-half
2 cups fresh spinach (or kale), chopped
½ tsp smoked paprika
½ tsp black pepper
Salt to taste
🍳 Instructions
Brown the SausageIn a Dutch oven, lightly brown sausage slices. Remove and set aside.
Build the BaseMelt butter in the same pot. Add onion and garlic; cook until fragrant.
Add Potatoes & BrothStir in potatoes and broth. Bring to a gentle boil, then reduce heat.
SimmerCook 20–25 minutes, until potatoes are tender.
Finish CreamyStir in sausage, milk, spinach, paprika, salt, and pepper.Simmer 5–8 minutes, just until greens wilt.
ServeLadle into bowls and serve with biscuits or crusty bread.
