š² Old-Country Beef & Noodle Camp Soup
A simple, soul-warming classic ā tender beef, soft noodles, and rich broth made to comfort.
Serves:Ā 6ā8Cook Time:Ā 45ā50 minutes
This soup is the kind you let simmer while the house is quiet ā familiar flavors, gentle warmth, and deep comfort.

1 lb beef stew meat or chuck roast, cut into small pieces
2 tbsp butter or bacon grease
1 small onion, diced
2 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
5 cups beef broth
1½ cups egg noodles (or broken spaghetti)
1 tsp thyme
½ tsp black pepper
Salt to taste
Optional: bay leaf
š³ Instructions
Brown the BeefHeat butter or bacon grease in a Dutch oven. Brown beef lightly on all sides.
Build the BaseAdd onion and garlic; cook until fragrant.
Add Vegetables & BrothStir in carrots, celery, broth, thyme, pepper, and bay leaf.Bring to a gentle boil, then reduce heat.
SimmerCover and simmer 30ā35 minutes, until beef is tender.
Add NoodlesStir in noodles and simmer 8ā10 minutes, until tender.
ServeRemove bay leaf. Ladle into bowls and serve with biscuits or crackers.
