š² Hearty Beef, Potato & Onion Camp Soup
A simple, no-frills winter soup ā rich broth, tender beef, and comforting potatoes.
Serves:Ā 6ā8Cook Time:Ā 45ā50 minutes
This is the kind of soup that quietly simmers while the day unfolds ā dependable, filling, and deeply comforting.
š„© Ingredients
1 lb beef stew meat or chuck roast, cubed
2 tbsp butter or bacon grease
1 large onion, sliced
2 cloves garlic, minced
4 medium potatoes, diced
2 carrots, sliced
2 celery stalks, chopped
4½ cups beef broth
1 tsp thyme
½ tsp black pepper
Salt to taste
Optional: bay leaf
š³ Instructions
Brown the BeefHeat butter or bacon grease in a Dutch oven. Brown beef lightly on all sides.
Build the BaseAdd onion and garlic; cook until onions soften and turn fragrant.
Add Vegetables & BrothStir in potatoes, carrots, celery, broth, thyme, pepper, and bay leaf.
SimmerBring to a gentle boil, then reduce heat. Cover and simmer 35ā40 minutes, until beef and vegetables are tender.
ServeRemove bay leaf. Ladle into bowls and serve with biscuits or crusty bread.
