🥩 Saturday Chuckwagon Beef & Vegetable Camp Stew

A slow-simmered Saturday classic — hearty, rustic, and perfect for letting the pot work while you rest.

Serves: 6–8Cook Time: 1–1½ hours

🥩 Ingredients

  • 2 lbs beef stew meat or chuck roast, cubed

  • 2 tbsp bacon grease or butter

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 4 carrots, sliced

  • 4 medium potatoes, diced

  • 2 celery stalks, chopped

  • 5 cups beef broth

  • 1 tsp thyme

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • Salt to taste

🍳 Instructions

  1. Brown beef in bacon grease in a Dutch oven; remove and set aside.

  2. Sauté onion and garlic until fragrant.

  3. Add vegetables and cook 3–4 minutes.

  4. Return beef to pot, add broth and seasonings.

  5. Cover and simmer 60–75 minutes, until beef is tender and stew is rich.

  6. Serve hot with cornbread or biscuits.

🤠 Saturday Tip Weekend stews were meant to cook slow and feed many — the longer this simmers, the better it gets.

🍗 Sunday Chuckwagon Chicken & Rice Camp Bake

A peaceful, comforting Sunday dish — gentle flavors, filling, and perfect for a restful day.

Serves: 6–8Cook Time: 1–1¼ hours

🐔 Ingredients

  • 2 cups cooked shredded chicken

  • 1 cup uncooked long-grain rice

  • 1 small onion, diced

  • 2 carrots, diced

  • 2 celery stalks, chopped

  • 3½ cups chicken broth

  • 1 tbsp butter, melted

  • 1 tsp poultry seasoning

  • ½ tsp black pepper

  • Salt to taste

🍳 Instructions

  1. Preheat oven to 350°F.

  2. Combine rice, chicken, vegetables, and seasonings in a greased baking dish.

  3. Pour broth and melted butter over mixture; stir gently.

  4. Cover tightly with foil and bake 60 minutes, until rice is tender.

  5. Let rest 5–10 minutes before serving.
