We're continuing our early taste of fall with a warm, cozy supper that feels like autumn in a cast-iron skillet!
Today's Creamy Harvest Chicken & Pumpkin Biscuit SkilletĀ is filled with tender chicken, carrots, corn, onions, and a creamy herb gravy, then topped with fluffy homemade cheddar-pumpkin biscuitsĀ and baked until golden.
It's a little bit chicken pot pie, a little bit country biscuit supper, and a whole lot of fall comfort! ā¤ļø
š For the Harvest Chicken Filling
2 lbs boneless, skinless chicken breasts or thighs, cubed
2 tablespoons butter
1 tablespoon olive oil
1 small sweet onion, diced
2 carrots, diced
2 cloves garlic, minced
1 cup sweet corn
1 cup frozen peas
ā cup all-purpose flour
2½ cups chicken broth
½ cup heavy cream
½ teaspoon dried thyme
½ teaspoon rubbed sage
½ teaspoon garlic powder
Salt and black pepper to taste
š For the Cheddar-Pumpkin Biscuits
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon garlic powder
6 tablespoons cold butter, cubed
¾ cup pumpkin purée (not pumpkin pie filling)
½ cup buttermilk
1 cup shredded sharp cheddar cheese
š„ Let's Get Cooking!
1ļøā£ Brown the chicken.Preheat your oven to 400°F. Heat the butter and olive oil in a large oven-safe skillet. Season the chicken with salt and pepper and cook until lightly browned. Transfer it to a plate.
2ļøā£ Cook those vegetables.Add the onion and carrots to the same skillet and cook for about 5 minutes. Add the garlic and cook for another minute.
3ļøā£ Make the creamy country gravy.Sprinkle the flour over the vegetables and stir for about 1 minute. Slowly add the chicken broth, stirring as you pour. Add the cream, thyme, sage, and garlic powder.
Simmer until the gravy begins to thicken.
4ļøā£ Bring everything together.Return the chicken to the skillet and stir in the corn and peas. Let it simmer gently while you prepare the biscuits.
5ļøā£ Make those pumpkin biscuits! šCombine the flour, baking powder, salt, and garlic powder. Cut in the cold butter until the mixture resembles coarse crumbs.
Stir together the pumpkin and buttermilk, then gently add them to the flour mixture. Fold in the cheddar.
Don't overmix!
6ļøā£ Top that skillet.Drop generous spoonfuls of biscuit dough over the chicken filling.
7ļøā£ Bake for 20ā25 minutes, or until the biscuits are beautifully golden and cooked through and the chicken reaches 165°F.
Brush the hot biscuits with a little melted butter before serving. š§
